Cranberry Apple Pie I

I liked the combination of apples and cranberries, I also added chopped pecans. I only used 4 apples and half a bag of cranberries, that was plenty for one pie. I found it was not as flavorful as I had hoped and the tapioca made an odd gel consistency that I didn't think fit well with the pie. I think I will try another recipe next time because I do like to combo.

Cherry Snowballs

I am not a fan of coconut so I rolled them in crushed pecans before baking them. I might try adding some cocoa to the dough or putting a chocolate chip inside the cherry next time to get a more "chocolate cherry" kind of cookie.

Big Soft Ginger Cookies

I don't even like gingerbread cookies, but I made these as a trial run for Christmas cookies. I even thought that these were pretty good, nice and soft and sweet; however, I will cut the cloves by half next time. I also made the "vanilla glaze" recipe on this site for the drizzle.

Marshmallow Fondant

Much easier to work with the the typical rolled fondant recipes and it was very easy to work in food coloring to the "dough" phase. However, I needed to add way more powdered sugar than called for to get the stickiness down and have it be roll-able. I have seen other marshmallow fondant recipes call for only 2 tbsp of water, so I might try that next time to see if that helps.

Zesty Chicken Meatloaf

I mixed the cheese into the meat before cooking and then made it into meatballs rather than a loaf. I served it with enchilada sauce over rice. A very nice twist on dinner, thanks!

Cashew Avocado Chicken Salad

I used canned chicken and I think that is where I went wrong. Don't make my mistake! I love avocado and cashews but this had an odd taste. Worth trying again with a diced up grilled chicken breast, I think I would get better taste and texture that way.

Mack's Tunaburgers

I used the whole egg and panko bread crumbs. I also baked in the oven at 400F for 15 minutes, flipping half way through. Very quick and a nice change of pace for tuna. Great with an Asian sweet chili sauce for dipping!

This was my first attempt at hush puppies, and they turned out great! I only used about 1/4 of an onion and added 1/2 cup of corn to the batter. Perfect batter consistency! Will make again.

Crustless Spinach Quiche

I added an extra egg, used fresh salsa instead of sauteeing onions (to make it easier and add a little extra flavor), and only used 1 cup of cheese. I did it in muffin tins as other reviews mentioned, they turned out perfect. I now have a whole week's worth of breakfast ready! Thanks!

Grilled Flat Iron Steak with Blue Cheese-Chive Butter

I love blue cheese and this sounded great for my steak, but it was way too intense. Almost like eating a straight chunk of blue cheese. If I try this again (since I have a lot of blue cheese left over) I will be changing the ratio and maybe melting it slightly.

Slow Cooker Chicken Taco Soup

I made it on the stove since I thought about it too late to do it in the crock pot - only took 35 min from start to finsh. I also added a little extra cumin and chili powder since we like it spicy. So fast and tasty! This will definitely be a keeper.

Bacon for the Family or a Crowd

This is the best way to do bacon. My mom showed me this and I will never go back. The bacon stays flat and cooks evenly, and best of all there is no splatter!
