Cucumber-Mango Salsa
absolutely delicious! But it really should be made the night before, because the longer it sits, the better it tastes. It was great as a salsa with lime tortilla chips and tonight I'm planing to serve it as a condiment with grilled tuna. This is such a versatile dish.

California Cole Slaw
delicious! marinating overnight is a must, I made it the night before, great with burgers the next day, or any grilled food for that matter. even great to snack on!

Baked Scallops
great recipe and very easy. I placed the scallops in individual au gratin dishes, added about 1/4 cup white wine to the melted butter, tossed the scallops with some diced chives and replaced the bread crumbs with panko. YUM, YUM. The dish literally disappeared!
