Cinnamon-Roasted Almonds
Delish!! Only giving 4 stars because the recipe needed to be slightly changed. I double the try ingredients and subed vanilla extract for the water. If you don't double the dry ingredients then they do come out rather bland. Everyone was in love with these nuts!! I also used this recipe to candy pecans and it was a huge hit.

Apple Bread
Delish!!! I did make a few changes though. I used only 1 cup sugar (1/2 white, 1/2 brown), I subbed applesauce for the veg oil, used pecans rather then walnuts (it's the only nuts I had), and I sprinkled in a little nutmeg as well. Came out apple-y and sweet but not too sweet. I'm making more tonight...the whole family loved it!

Vegetarian Chili
Delish! I didn't have all the veggies called for so I used frozen mixed vegggies and one chopped red pepper instead of the zucchini and hominy. I used everything else that was called for in the measurement it was called for. For me it was just the right level of spiciness and consistency. Even my meat loving husband and father went back for seconds! So easy to make and so healthy!! Can't wait to make it again.
