Pumpkin Spice Bread

It is not fair of me to really rate this, as I totally changed it..I had extra pie filling and no other pans, so I invented a "recipe". Took 1 QT of pie filling, 1 c applesauce (instead of oil) 1 box white cake mix. 2 slightly beaten eggs, extra cinnamon and nutmeg to taste...Baked in a 13 x 9 pan at 350 for one hour...top split a little bit, but the end result was a moist cake and very tasty. I will definitely try the recipe as it is written, as it sounds delish, too!

Lentil Loaf

I always read the reviews of others before trying a new recipe. In this one I used sprouted sesame wheat bread,left out the soup mix and used curry, cayenne, thyme, and basil instead...a lot more. I sauteed 1/2 onion and 3 large cloves of fresh garlic, and two grated carrots. I stayed with the tomato paste, as it has 100mg less of salt than catsup and also the main reason I did not use the soup mix. I left off the breadcumbs enirely. Letting it sit for 10 minutes wasn't enough to let it cool and firm up. And, perhaps, the lentils need to be drained before mixing with everything else(it wasn't mentioned anywhere) All in all, this was a great recipe for lentil loaf and I have tried many of them with little satisfaction. Braised Balsamic Chicken

Thank you for this original recipe for chicken...always looking for a new way to prepare. I did make a few changes (personal taste). I used 5 chicken thighs for the flavor, I added a few large, sliced shallots to the onions and later on, added several large, diced garlic cloves. I first used 14.5 oz can of tomatoes and added about a cup of fresh from the garden and still found it needed more, so I added an additional 14.5 oz can of tomatoes. This made the volume right, but had to tighten it up a little with a flour/sauce slurry...did the trick! I served it over fettucine with fresh steamed green beans, drizzled with olive oil and sprinkled with fresh romano...mmmmm....This will become one of my family favorites. Thank you for sharing!

Creole Pork Chops

Ever since living in New Orleans, I have made this recipe. I do tend to like things a bit spicier, so I added one fresh jalapeno (with seeds) and 3 large coarsely chopped cloves of fresh garlic, along with 2 TBSP of the Cajun seasoning. I, too, saute` the veggies first, in olive oil, and add to the tomatoes and sprinkle liberally with dried basil...THEN I saute` the pork chops in the remaining olive olive and sear both sides and then add to the "stew"....served over rice with crusty French bread on the side is how my family likes it. Nice to see this recipe posted!

J.P.'s Big Daddy Biscuits

I love them! Gave this recipe 5 stars. I did follow the advice of "patting dough" rather than kneading it. As to the cook who said they were "tasteless" I suggest using the full amount of the salt recommended and substitute butter for the shortening. Very flavorful and oh, so fluffy! Breakfast Upside Down Cake

Per other comments, I made the following adjustments: Sliced 4 medium potatoes very thin sprinkled w/pepper and garlic powder; one 12 oz pkg bacon; 7 eggs with 4 tbsp milk; 1 cup shredded chipotle cheddar. Layered: potatoes, eggs, bacon, cheese. Used 9 inch glass pie plate and covered with foil. Baked for a total of 35 minutes at 325 degrees. I did not flip it over. I cannot tell you what a hit this was in my household! Thank You!

Favorite Corn Bread

I did make a few changes, as I wanted to bake in a 12 inch skillet: I doubled complete recipe; 3 eggs, brown sugar instead of white; corn oil instead of butter. Will use 12 inch cast iron skillet. Follow-up, it needed the extra egg, as it was just a little crumbly, but otherwise very good. I do enjoy baking in the cast iron skillet. Really love this recipe! Thanks for sharing.

Baked Teriyaki Chicken

This was excellent, nice and moist and very flavorful. I really liked the sauce, although I did use brown sugar instead of white. Another little change: used 6 boneless, skinless breast and baked at 400' for 40 minutes covered with foil. Then at 350' for 10 minutes, uncovered. I found that the sauce was enough and the au jus from the chicken roasting was great to spoon over the rice. Thanks!

Stuffed Cabbage Rolls

My mother made these when we were little-love them! I did make some changes by adding some oregano to the meat/rice mixture and also 2 TBSP of medium hot salsa. I used a 28 oz can of stewed tomatoes for the bottom of the pan where the rolls will cook. Then I covered the pan with foil and baked for 1-1/4 hrs. With the remaining inner head of cabbage, I sliced it thickly and steamed it for a side veg along with boiled potatoes. Garnish the cabbage rolls with sour cream and sauce the cabbage and potatoes with the tomato sauce...and a little sour cream. Very yummy!

Blackened Tilapia with Secret Hobo Spices

Overall, this was a very tasty blackened recipe. Like otherss, I adjusted the spices: 2 TBSP paprika, 1/2 tsp of black pepper, NO white pepper, 1 tsp salt, 1/4 tsp garlic powder. I used catfish filets and needed to cook them longer than 3 minutes each side. Unfortunately, all the "seasoning" of my cast iron pan came off in this one use. Did anyone else have this problem? I will definitely be doing this again, but outside. I had to put a fan in the kitchen window to take out the smoke. But, it sure was delicious! A keeper!

Candied Sweet Potatoes

Chicken Enchilada Casserole II

I have made this recipe before, following it exactly and it was too moist. This time, as other cooks did, I adjusted the amounts as follows: only used 8 oz sour cream, NO salsa, 1/2 c diced onion, used 12 6" CORN tortillas, 5 lg thighs (smothered in chipotle sauce once diced), 3 cups cheddar, and 4oz can diced chilies. Letting it stand is a must. Rave reviews on this dish! Thank you.

Green Bean Casserole I

Great and tasty recipe. I reduced the milk to a 1/4 c and added 1/2 c of sour cream for thickness and taste. I also added some sauteed onions and shredded cheddar cheese to the mix. It was the BEST green bean casserole I have ever tasted. This one's a keeper and is requested for Christmas dinner.

Homesteader Cornbread

Great cornbread! I followed other member suggestions and switched the cornmeal with the flour. Since the only pan I have is 10 x 13 NOT 9 x 12, I decided to bake it in a glass loaf pan. Living in high altitude, i extended the baking time to 1 hour at 425 and it came out great! A wonderful accompiament to a hot bowl of beef stew. Comfort food on a cold winter night. How I love winter cooking! Thanks again.

Loaded Potato Soup I

This was a great soup! My husband, who doesn't eat potato soup, absolutely loved it! The sour cream and cheese were the big difference in an otherwise bland soup. I did use a lot more cheese, however: for the normal recipe I increased it to 2 cups and also added 1 tsp of dill weed. I made double the recipe and it disappeared in two days. Thanks!

Easy Garam Masala

Best Fried Green Tomatoes
