Chicken Enchilada Soup III
I was given a VERY similar version of Chicken Tortilla Soup from a co-worker, and it turned out very good. The proportions are the same, the only addition is a can of green chilis and specified to use green enchilada sauce. I left out the chicken breast, as we are vegetarian, and used 'vegetarian chicken-flavored' stock instead of chicken broth. I could not find masa harina in my local grocery store, but read online to blend up corn tortillas as a substitute. I actually just ended up slicing up the tortillas and adding it to the soup where the masa harina should have been added. Most disolved by the end of the 30 minutes of cooking. I only added about a cup of the water called for. We served it with sour cream on top! My husband and oldest son absolutely loved this! The next time I make this, I will probably only add about half the cheese to the soup pot, and sprinkle a little on top of each bowl. Very filling, great flavor.

Mrs. Sigg's Snickerdoodles
I've made these cookies quite a few times, as they are my husband's favorite, and they've always turned out perfect. He requested them a few nights ago, and I was out of cream of tartar (which I didn't realize until after I'd started mixing things!). I searched for a substitute and ended up using 6 teaspoons of vinegar. I was extremely nervous, but I am happy to report that they came out just as amazing as usual -- with no hint of vinegar after they baked! These are a keeper, all around!!!

Quinoa and Black Beans
I've made this a handful of times, and it's turned out great each time. I think it's good both hot and cold, but my young kids ONLY like it cold. I only use 1 can of black beans, as many have suggested. Otherwise, I keep it exactly the same!
