I wanted something different from the standard "hash brown casserole". This recipe is a total winner. My family and guests always rave about it and there's never any leftovers, no matter how much I make. I use whatever type of potatoes I have on hand, but other than that I don't monkey with the standard recipe; it seems perfect just the way it is.

I just made this for an Indian pot-luck dinner party. The only addition I made was a 1/2 tsp. of salt, but otherwise made it exactly as shown. I served it over basmati rice. Turned out great, everyone loved it, and it made great leftovers the next day.
