Easiest Peanut Butter Fudge

Reviewed: Dec. 23, 2009
I think I added too much peanut butter because when I mixed everything together it was very thick, like a cookie dough. So I added a little milk and, viola, creamy delicious pb fudge! Awesome!

Sour Cream Apple Pie Deluxe

Reviewed: Jul. 14, 2009
I used just one large Gala apple, which was just enough for my store-bought crust. This is really, really good. It's so rich, it's almost like eating an apple cheesecake.

Award Winning Peaches and Cream Pie

Reviewed: Jun. 24, 2009
We couldn't hold ourselves back and first tasted this while it was still warm from the oven. I was a little disappointed. The next night, after it had chilled in the fridge, we ate it again. Wow, delicious! As difficult as it is, make sure to let this chill completely! EDIT: I wanted to make something sweet for my diabetic mother, so I switched in Splenda, sugar free vanilla pudding mix, skim milk, "light" canned peaches, and reduced fat cream cheese. It was still amazing! My oldest nephew called it "award-winning," and he didn't even know the name of the recipe!

Mediterranean Pizza

Reviewed: Jun. 24, 2009
Following other reviews I used non-marinated artichokes, omitting the "juice" altogether. Before adding any ingredients I mixed dried herbs (oregano and basil) into olive oil and brushed that all over the crust. I layered fresh basil leaves over that, then followed with the listed ingredients. Tip: Don't use ham, use SALAMI! I use fresh cherry tomatoes, as called for, and think they taste terrific. This pizza looks amazing and tastes even better!

Peanut Butter Balls I

Reviewed: Dec. 23, 2008
I placed the peanut butter mixture in the freezer and let it solidify. I used a Tbsp scoop to form the balls, then used chopsticks to dip them in the chocolate. This made it easy and minimized the mess.

Spinach Dip with Water Chestnuts

Reviewed: Dec. 23, 2008
Definately double the spinach or else it will come out too creamy. I keep everything else the same except I add 1/2 cup SHREDDED parmesan cheese and make it the night before so that it sits for about eight hours, not two. Really, the extra time improves the flavor. And do use all the water chestnuts called for--they impact the flavor very little but add a terrific texture. Also, the best way to drain the spinach is to place (thawed) spinach between two large dinner plates and squeeze them together over the sink. The liquid drains, leaving the spinach neat and dry. I find this much less messy than actually "squeezing" the spinach. I make this for all family events. Everyone who tries this loves it!

We mixed the leftovers with pasta, marinara sauce, and feta cheese. Wow! Some of the best pasta you will ever eat.

Grilled Chicken Breast with Cucumber and Pepper Relish

Reviewed: Jun. 27, 2008
After reading reviews I added italian dressing both to the meat marinade and the relish. I used pork chops rather than chicken and broiled them in the oven. Very tasty!

Following others, I poached this salmon rather than grill it. It was absolutely wonderful, moist and flavorful and very satisfying.

These were good and very filling! I bought jumbo lump canned crab. It's more expensive, but results in a great dish.

Vidalia Onion Pie

If you do not like onions, you will not like this recipe. I hoped the ingredients would come together in some interesting way, but it just tastes like a quiche with too many onions.

I didn't have red wine vineger and had to use apple cider vineger instead. It still came out great.

Fudge

I used two parts semi-sweet chips and one part creme de menthe chips. I also sprinkled peppermint crumbs on top prior to cooling. Although the texture was chewy, like a tootsie roll, the flavor was great!

Banana Split Cake II

This has become my favorite summer dessert. It's perfect for a cookout or a birthday party. I serve it in a large glass bowl, like a pudding, and watch as it disappears. Everytime.

Pineapple Cheese Ball

Reviewed: Jun. 27, 2007
Very good. Be sure to let it sit in the fridge a good while so that the flavors blend. Following others' suggestions I added a dash of seasoning salt and a touch of worchestershire sauce. It came out sweet and zesty!

I tried this with strawberries, adding strawberry preserves and a little corn syrup to fresh cut berries and pouring those over the batter. I served it with whipped cream and a fresh strawberry on the side. Great dessert!

Spanakopita II

Reviewed: May 1, 2006
This is the best spanakopita recipe I have found! I added some minced garlic and used a sweet Vidalia onion but otherwise left the recipe alone. Delicious. The sweet onion really added to the flavor. I served it with fresh lemon slices and pita bread with hummus.
