Tabbouleh III

Reviewed: Jul. 13, 2007
Good! As others recommended, I only used 1 cup of water with the bulgur and therefore did not have to squeeze out any moisture. I also added one bouillon cube for a little extra flavour. I halved the amount of oil and lemon juice called for. It seemed like a lot of dressing as written and I am really glad I did. I added 1/2 chopped jalapeno, some cumin and black pepper. Next time I will add a dash of sumac as well.

Guacamole

Reviewed: Jun. 19, 2007
Yum! I used powdered onion and garlic to get the flavour but not the texture, one drained can of diced tomatoes with garlic and onion instead of the fresh tomatoes and a dash a cumin. Oh...and I kept the pits in the container with the guacamole to keep it from turning colour.

Good! Just needed a little salt. Oh...and I did not add parsley. Thanks!

Strawberry Bread

Reviewed: May 31, 2007
Okay but not a keeper. As per other reviewers, I increased the amount of strawberries and added vanilla. The bread falls apart very easily. And the taste is merely okay. Thanks anyway.

Gouda Spinach Quiche

Reviewed: Jan. 1, 2007
Good and easy! Very versatile, too! I used some diced ham instead of bacon, one can of evaporated milk instead of half and half, feta instead of gouda, and made it crustless. I added some italian seasoning to the spinach mixture. Keeper! Thanks!

Beetroot Hummus

Reviewed: Jan. 1, 2007
Eh...basically this was hot pink bland hummus. I couldn't really add too much to it because I didn't want spices to conflict with the sweetness of the beets. This was an interesting experiment with beets, but not a keeper. FYI - to save time, I cooked the beets the day before and used one can of garbanzos. It needed extra cumin and lots of salt.

Pastitsio III

Reviewed: Nov. 27, 2006
This was good considering that I did not know what to expect (never had pastitsio before). I used a basil pasta sauce because I did not have plain tomato sauce and a drained can of diced tomatoes in place of fresh. Instead of broth, I swirled 1/4 cup of water in the tomato sauce jar. Otherwise, I followed the recipe as written. It took me 1 1/2 hours to get this into the oven and completely destroyed the kitchen. Was it worth it? Eh...it was good, but not extraordinary. I doubt I would do this again unless someone wanted me to. If I did, I would double the sauce as others suggested and maybe swirl it around instead of just having it sit on the top layer. Thanks anyway.

Hearty Split Pea Soup

Just okay. I added some extra spices because it seemed like it would be a little bland as written. I am going to keep looking for another split pea recipe. Thanks anyway.

Easy Rum Cake

Reviewed: Nov. 21, 2006
Extremely moist and tasty! I made no changes to the recipe as written. Note: this is exactly the same as the 'Golden Rum Cake' on this site, but with different measurements for the glaze. I did not notice any real differences either.

Winter Lentil Vegetable Soup

Reviewed: Nov. 14, 2006
Just okay. I did as others and upped my lentils to one cup. I think I will make it again, but without the curry. With shredded cabbage, it tasted like a wierd indian sauerkraut.

Coffee Flavored Liqueur III

Reviewed: Nov. 8, 2006
Not as good as the known brand. I halved the recipe for the first time around. Since the recipe did not half easily, I followed another reviewers advice and used 1/2 cup white sugar, 2 tbsp brown sugar, and one cup of vodka. Instead of straining the coffee, I put it in a tea strainer in the pot. There was too much of a sweet coffee flavor and with only 1 cup of vodka it was still too strong. I'll either try another recipe or stick with store bought. Thanks anyway.

Amaretto

Excellent and easy! I only wanted to make half a batch for the first time around just to make sure I liked it. It halved easily and tastes great! Very smooth-definately something to add to my eggnog.

Coquito

Reviewed: Nov. 6, 2006
Easy and good! Next time I will add a little extra rum as it was a little weak. So everyone just added extra afterwards. I did worry that there would be a strong coconut flavour, but that was not a problem at all. It was very subtle. Thanks!

Curried Hummus

Reviewed: Nov. 4, 2006
This was okay, but not a keeper. I followed others reviews and used the chickpea juice instead of water. But unfortunately I didn't follow the suggestions of using less liquid. 1/2 cup was definately too much and made the hummus runny. Also, there was too much lemon juice. I think I prefer hummus recipes with tahini, too. This wasn't bad, but I like other more traditional recipes.

Pork and Sauerkraut Stew

Reviewed: Oct. 30, 2006
Who knew sauerkraut in a stew was good?! I used turkey sweet sausage instead of pork, added a couple chopped up carrots and rinsed the sauerkraut. I cooked it on the stovetop instead of a crockpot, so I added some chicken broth so it would not get dry. A keeper! Thanks!

Creamy Banana Bread

Reviewed: Oct. 24, 2006
Yum! Very moist! I used 2 cups of mashed bananas and added a dash of pumpkin pie spice to the batter. I also used pumpkin pie spice instead of cinnamon for the nut layer. I used walnuts instead of pecans, just because that's what I had on hand. I broke the walnuts into small pieces and did not have a problem cutting into the bread as others did. So maybe that is the key. A keeper!

Anna's Amazing Goulash

Reviewed: Oct. 17, 2006
The meat came out well. I only used beef cubes which came out nice and tender. I did not add quite as much flour as called for because it seemed to get so thick with just half a cup. I did not add the bread crumbs or cabbage, but I don't think that was a big loss. Next time I will add more beef & veggies and cut down on the amount of fluids total (is vinegar, beef stock, beer AND water really necessary?) There was quite a bit of stock that came out of this. Oh! And it could use a dollop of sour cream on each serving. I really consider this a 3.5 star recipe. There is a lot of potential, with personal tweakes.

Real Hummus

Reviewed: Oct. 16, 2006
Yum! I made changes as per the author's review. I only used 1/2 tsp salt and cumin to taste (and lots of it) instead of pepper. I added the liquid from the beans a little at a time until I got a desirable consistency. I also added some smoked paprika. I forgot to add the olive oil and didn't miss it - that made it a little lower calorie too! Oh! And if you are not a garlic fan, you might want to cut down a little.
