Soft Oatmeal Cookies
A great oatmeal cookie recipe! Crispy on the outside - soft on the inside :) I altered the recipe by substituting 1/2 tsp of vanilla for 1/2 tsp of maple flavoring. I also cut the oats down to 2 1/2 cups so they wouldn't be too dry. I added 1 tsp of baking powder in addition to the baking soda because I like a "puffier" cookie. I added 1 cup of chopped dried apples and 1 cup of white chocolate chips. Finally, I baked them at 350 for 14-16 minutes, and took them out a bit early to finish cooking on the warm cookie sheet. A keeper for sure!

Cheeseburger Soup I
Great soup for a cool fall dinner! I made a few changes...I used a full pound of ground beef and two chopped jalepenos to the meat/veggie mixture. Then, in addition to the chicken broth, I added a can of condensed cream of celery soup and a can of condensed cheddar cheese soup to give a nice creamy consistency without having to add milk. The cheese soup also allowed me to cut the shredded cheddar in half. I didn't add the sour cream, as I am freezing half the batch and will be re-heating the soup for lunches at work. But I am going to serve it with sour cream and extra shredded cheddar. Thanks for a great soup recipe!

Texas Slaw
Great coleslaw recipe! I add some chopped red onion, and some chopped bacon to the recipe along with a little of the lime zest. Make sure to make this ahead of time to let the flavors blend.
