My cooking triumphs
I once made cookies out of a nearly-spoiled cucumber left over from a large harvest out of our backyard garden. I processed the cucumbers and mixed them, vanilla, sugar, flour, etc and baked them up-they were a huge success! Surprise, surprise!

Eggplant Parmesan
I liked it--I've never had eggplant before and this was a nice, safe introduction! We cut it wrong, so it wasn't exactly as it should have tasted, but I would recommend this recipe, even to families with children!
