Cranberry Pistachio Biscotti

Batter looks like it won't form a log, but by gosh if you keep your hands moist with cool water, it DOES!! Taste is outstanding and substitutions of fruit and nuts work great too.

Apple Slump

Fast and simple and delicious. For the complainers, if you don't like nutmeg, why would you make a sauce with it?? This was a wondful warm and quick dessert. Great with vanilla ice cream.

OH DEAR... another favorite pie. VERY, VERY rich. Cut tiny pieces. And we preferred it with homemade whipped cream instead of meringue.

Peach Ice Cream

Made a half batch of this as the whole batch would have overflowed our ice cream freezer. VERY good. It is possible to just heat the mixture to 170 degrees to cook the eggs and then cool in fridge before making ice cream. This is helpful for those who don't have 'homegrown' eggs. Also a pastureized egg substitute will work as well.

Very tasty, but I did use the suggestion to cut the sauce for the filling in half and prebaked the crust. Worked well that way.

Loved this in its original form, just added cinnamon and sugar to the raw apples. Tried the variation with the applesauce in the crust-while it was tasty-it just wasn't the same.

White Fruit Cake

I made this first last Christmas (with a few fruit tweaks of my own, but I always do that)and everyone loved it, even the fruitcake resisters. This year I experimented again and baked it in wide mouth pint jars 3/4 full of batter. Then snugged new lids on the hot baked jars, they sealed as they cooled and made wonderful gifts. This is THE BEST!!!!

Refrigerator Nut Rolls

These were very good. Instead of rolling and cutting them as individual cookies, I rolled and baked each as a large nut roll. Made wonderful hostess gifts when visiting at the holidays.

Chocolate Covered Cherries

WONDERFUL!!! I am so sorry that the first review is so negative. These will become a holiday tradition at this home! Two minor suggestions for anyone nervous about trying these. First don't melt the butter to mix with the corn syrup, let sit at room temperature until very soft. Next, keep your hands dusted with powdered sugar as you roll the fondant around the cherry. The cherry juice tends to leak out fo the cherry and may make the fondant sticky. WONDERFUL *******
