Curried Coconut Chicken
I've always thought Indian food was so hard to make but this was super easy to make and very good. The only thing I changed was the coconut milk, I used low-fat. I served it with naan bread which was a huge hit! My husband and kids (ages 4 and 2) really liked this. My kids had so much fun helping me make and roll the naan bread. I'll be making both again soon. On a side note my kitchen did smell like curry for over a week so be prepared for that.
