Beef Barley Vegetable Soup
This is so delicious! I put everything in a crockpot and cooked on low for 10 hours. I added the barley about 30 minutes before I served it but it was still too hard. We ate it anyway, but I left the rest in the crockpot to cook on low for 3 more hours and it is now out of this world. Next time I will make the soup before I go to bed and leave it on low overnight.

Pumpkin Cheesecake I
i'm following a low carb diet and this is a fantastic recipes if you do the following: cut the recipe in half, use splenda instead of sugar, and bake in a glass dish. When it's cooled, spoon into a dish with a dollop of whipped cream and you have a dessert (or breakfast) for only about 6 carbs!

Heart Attack Eggs
i always eat my eggs this way. In fact, whenever i fry bacon, i save all the drippings in an empty jelly jar and keep in the fridge. That way i can fry up the eggs really quick!
