Scalloped Corn I

I have made this recipe for years, and it is a must for Thanksgiving in my house! We love it, and we like it even better when I use one can of creamed corn and one can of regular corn (drained).

Wonderful Banana Cake

This was a big hit with my family. I made it as written, but only cooked for 40 minutes in a preheated oven. It was cooked perfectly and is very moist! My son wants me to add chocolate frosting next time. :-)

Neat Sloppy Joes

This recipe is perfect as written. Truly the best sloppy joes I have ever had. And if the guests at my son's birthday party are any indication, the best they have ever had as well. I tripled the recipe and only have enough leftovers for dinner tonight. I'm looking forward to it!

Winter Fruit Salad with Lemon Poppyseed Dressing

I made this salad as a side dish for my son's birthday party this weekend and it was a big hit. I substituted bleu cheese for the swiss cheese and served it on the side. It was so good I barely got any and had to tell my brother to step away from the salad so I could try some! (He had fixed himself a GIANT plate of it) Definitely a winner!

Salsa Chicken

I made this recipe last night (as directed) and was glad that I doubled it--everyone in my house loved it! My daughter asked, "Are we having that chicken tomorrow night for dinner, too?" When I said yes, she said, "Good! It was awesome!" We're all looking forward to leftovers tonight.

Chicken Spaghetti II

I've never had chicken spaghetti before, so I don't really have any basis for comparison. But my family and I really enjoyed this recipe! Even my picky/spice-phobic 6 year old son chowed down without a word and when he was done said "Yum! This is a keeper!" The only adjustments I made were that I used a whole package of spaghetti (16 oz.), used all the spicy liquid goodness from the tomatoes/peppers and added some onion powder in addition to the garlic powder and freshly cracked pepper.

Mexican Rice II

Creamy Rice Pudding

Made this last night. I should have made a double batch, because we all loved it! I left out the raisins and topped with cinnamon. Also, I think it's better when it's served chilled.

Parmesan Baked Potatoes

Having suddenly realized that I was out of parmesan cheese, I used romano cheese, and it turned out wonderfully! I also added salt and fresh cracked pepper. Also, I flipped the potatoes over, added a bit more cheese and continued cooking them for about 10 additional minutes. My husband raved about these potatoes!

Cheesy Ham and Hash Brown Casserole

This is also excellent as a potato side dish with ham--just omit the ham from recipe. My whole family loves it and people ALWAYS request the recipe. I'm making it for Christmas!

Chocolate Chocolate Chip Cookies I

These cookies were very good, but were not the best chocolate chocolate chip cookies I have had. I thought they could have been more chocolatey. I think next time I will use a whole cup of cocoa powder.

Mexican Spiced Turkey Tortilla Soup

My family LOVED this soup! They all said it was the best soup they ever had. I added a can of black beans, used a 15 oz. can of corn instead of the frozen and used a can of petite diced tomatoes instead of the tomatoes with chilies. It was perfect! Made this way, it was not too spicy for the kids to eat. Bravo!
