Pecan Chicken Pockets

Looking for lunchbox ideas for the kids and this will be in rotation this school year. I left out the mushrooms since I didn't have them, but I think they'd add to the flavor of the sandwich. Pecans add a nice crunch. Very tasty!!

Grandma's Peach French Toast

Simple, delicious, and CHEAP. I spent less than 3 dollars to make the whole thing and it fed 8 people. Diced the peaches so they covered the dish better. Other than that, didnt change a thing!

Chicken and Eggplant Alfredo

I find jar Alfredo to be rather bland so I added garlic powder, nutmeg, and dried basil after pouring in the sauce. I was too lazy after working w/ that eggplant so I just fried the chicken strips in the same pan and the leftover bits of bread crumbs browned into the chicken nicely. Kind of a heavy meal, but sneaks a vegetable in nicely for the kids. Thanks :-)!

Chinese Chicken Fried Rice I

The key to this for me was the order of ingredience, I sauted the chicken in some sesame oil, then added the onions soy sauce, let onions cook until soft, then added the peppers and carrots (no celery), then the ROOM TEMP. rice, then the remaining Soy and last the pea pods. This tasted like it came out of a take out box- Thanks!

Chocolate Covered Strawberries

I'll never use the melting chips at the craft store again! The shine, taste, and presentation are store bought quality! Made as written w/ butter flavored shortening. I didnt put one batch in the fridge and just let them cool on the counter before serving and these were MUCH softer than the batch that went in the fridge for later. When making again, I'll prob. skip the fridge and serve immediately.

Cabbage Roll Casserole

Half the recipe to fill 1 9x13 baking dish. Added garlic powder, worcestershire to the meat and some cider vinegar to the cabbage. We clean out the dish in one sitting at our house, thanks!!

Cordon Bleu Stromboli

I wanted more of a "cordon bleu" taste so I kicked this one up with 1-2 tbs chopped onion and 1 t of minced garlic. I also added some some ground mustard and nutmeg and fresh parsley for garnish. Brushed w/ egg yolk before baking. Also I may adjust cooking temp to 375 because it took about 45 minutes to cook. Now all I need is to come up with a nice dipping sauce- Thanks!

Chocolate Trifle

I needed a dessert in a hurry for a gathering I was having and was able to throw this together in 10 minutes using brownies from the bakery section of the grocery store. Total life saver being pressed for time. I've also done this with my own whipping cream and I think it's well worth the time for the improved taste!

Antipasto Pasta Salad

MAKE THE DRESSING!! The 1st time I subbed with a bottled Kraft dressing and there was no comparison. Perfect for large gathering or potluck, but depending on the quality of meats used, it can be a costly dish. I ask the deli counter to give me thicker slices of the meat/cheese and chop it up small I find this enhances the meat/cheese flavors.

Chicken Caesar Pasta

This would've been a 4 star for me if I'd cut the vinegar. It seemed too over powering- jmho. That being said, I had unexpected teenage company and was able to whip this up to feed 8 people in under 15 minutes with pre-packaged chicken. I also used baby spinach instead of lettuce and chilled the pasta a bit before serving.

Chinese Shrimp and Tofu Soup

My kids ate TOFU!! Everyone loved this! I'm glad I read the reviews, otherwise I wouldve used rice vinegar. I found rice wine next to the cooking wines at my local market. Make sure you use fresh ginger (smelled amazing) and firm tofu. I added scallions and served w/white rice and soy sauce

Grilled Peanut Butter Apple Sandwiches

This was really yummy-tasted more like dessert than lunch. The cinnamon/sugar could probably be adjusted to suit taste. I used PB on both sides of the bread and added cin/sug. to the tops of the bread while frying which gave it a fried dough taste. My 5 yr old said this was the best lunch she's had in her whole life ;-. Next time, I'd like to try actually grilling these in on a panini grill to maybe cut down on the calories. Thanks!

Pesto Torta (Layered Spread)

Took this to a baby shower and received many compliments. Used fresh pesto and roasted my own peppers. I molded it into a mini-bunt pan, which produced a beautiful finished product. If I do make this again, I'll definately dice the peppers to make for easier scooping onto the crackers! Thanks :-)

Chicken Salad with Bacon, Lettuce and Tomato

We always make wraps w/ this at our house and whenever my husband brings it to work, ppl think he bought the sandwich at a local gourmet deli! Great way to use our left-over chicken- I like to mash the avocado right into the salad so its not too over powering, but still gives that flavor to the dish. :-)

Pineapple Upside-Down Cake V

This would have been 5 star if I didnt tweek the 2nd time around. First off, Golden Butter Cake mix, instead of plain yellow changes this from being just ok, to incredible. The amount of liquid needed for Golden Butter is also the perfect amt. for what you get out of the pinapple cans. 2nd, the cooking time is way too long. I'd start checking this after 25 min, as over cooking is one of the main reasons it cracks/falls apart when taking out of the pans. I have yet to throw out any of the left-overs on this cake, as the whole thing ALWAYS gets eaten!
