About this Cook
I've always loved to cook, but learned a great deal out of necessity while my husband and I worked our way through college with two kids. Having to "make do" I learned how to utilize herbs and spices to make otherwise plain dishes pop with flavor! I get a kick out of it. I also love that my kids are willing to try new things, and I think it has something to do with the variety that I serve... otherwise I get bored. My sister lives 2000 miles away, and our most favorite things to share are recipes, most of which we made up.
My favorite things to cook
Some of my favorite things to cook are meats, wine based sauces, and deserts. I also like to keep my premade ingredients to a minimum; it is so much healthier and it tastes better made from scratch.
My favorite family cooking traditions
We don't have too many yet, but one we have is making a birthday cake for Jesus on Christmas day.
My cooking triumphs
A last minute italian pasta salad for a party at a friends house that was ravaged in a number of minutes; a recent chicken marsala that my husband will never forget.
My cooking tragedies
Ha! Okay, skeleton's coming out. We had these very old rabbits that turned out to be worse than useless for breeding (this was one of those trying-to-pinch-pennies-while-in-college fiasco's). My husband grew up on all sorts of game, so taking his cue we got them fixed up and I prepared a cheesy "chicken" casserole meal to take to some friends house. Well, one bite into this extremely tough, chewy casserolle, my girlfriend immediately covered her hands with her napkin, holding it all back while her gag reflex went into overdrive. She managed, "Is this what I think it is?" We about fell of our chairs laughing, knowing her dislike for out-of-the-ordinary game. Needless to say we ended up eating something else.

Cambodian Chicken Soup
I put this in my slow cooker as I was running out the door, starting with cold water and put it on high for 3 hours. I didn't have everything the recipe called for, like fish oil/sauce... also instead of curry paste I used dry ground and also ground ginger; for peppers I slivered and sauted orange & red sweet peppers and a med onion, and added brown rice raw (just over 1/2 C). For the chicken I threw in 2 chicken breast whole. When I got home I pulled out the chicken and shredded coursley w/a knife and returned it to the cooker; lastly I added the can of coconut milk and a can of sweet corn, and served it immediately. It was the perfect consistency. My family raved about it and demanded it go in the "keeper" recipe book.

Curried Chicken and Brown Rice Casserole
I wanted to make this casserolle-style in the oven, so as not to dry out the chicken I substituted whole chicken leg pieces for the cut up breast. I mixed all the ingredients except the water and chicken several hours before to allow for the flavors to combine. When it was time to bake it, I added the rice and water and poured the entire liquid mix into a greased casserolle dish. While doing this I seared the chicken in hot olive oil, about 2 min's each side, then pressed them into the dish as well. After spooning a little of the tomatoe liquid over the top of each leg piece I then topped just the pieces with parsley (for looks!). I covered it and baked it at 350 (180) for double the time (1 1/2 hours). It looked gorgeous and smelled divine. I needed to serve 15 men so I quadrupled the recipe. It got better than rave reviews from the men, they went wild over it. Thanks for the great recipe, it's a keeper.

Shrimp Salad Bagels
This tasted GREAT. I broiled the sandwiches in nutty grain bread. The only thing I would change is to add an egg to firm up the filling next time because it was a bit runny.
