Carrie's Garlic Pesto Tuna Salad Sandwiches

This was the best tuna salad I have ever tasted. I made my own basil pesto and toasted the rye bread. The garlic made this a winner. I use Pregresso tuna in olive oil. I drain the oil, but it leaves a great taste on the tuna. Thanks for the recipe.

Chilled Peach Soup

I made this soup for a dinner party of 8 people, and it was absolutely wonderful. I used it as a DESSERT soup. I baked an Amaretto Peach Cheesecake and served with it. I noticed some of my guest were dipping a bite of cheesecake into the soup, then everyone started doing the same. It is fantastic!!! Thank you JDVMD. You must be a great cook.

Cajun Spice Seasoning Mix in a Jar

This was fantastic. We had our annual Mardi Gras party last year, and I ordered small 2 oz. bottles, filled them with the mix, and small purple, gold and green ribbons around the lid. I typed the name of the mix on a small address label and attached to the jar. I gave them as parting gifts to our guests. If anyone has another idea for guests gifts, I would love to hear then, since the next Mardi Gras party is less than 2 months from now.

Gourmet Chicken Sandwich

This is a great chicken sandwich. I bought chicken scallopini already flattened at the grocery store, and sauteed it along with the garlic in olive oil. It only took 5 minutes on each side. I also covered plain focaccia with olive oil for salads and dressings and sprinkled with rosemary, and put it under the broiler until toasted. I then laid the chicken cutlets on top of the bread and added roasted red peppers on top, left the top slice of focaccia off and served open faced. Served with a simple salad. It was amazing.

America's Favorite Grilled Cheese Sandwich

These are delicious, but the easiest way to spread the butter is to melt it in the pan and move the bread slices over the butter after it is melted, place the cheese on one slice of bread and cover with the other. Just a hint!

Chicken and Pasta in a Mango Cream Sauce

Crab Quiche Bake

This recipe was a winner. I served it for brunch today, and had to make copies for our friends. I forgot to add the half and half of all things, but they raved about it anyhow. I used lump crab instead of imitation. I will bake it again using the half and half. I thought it was kind of dry, but couldn't figure out why until I saw the half and half in the refrigerator after our friends left (at least, there were fewer calories).

Spicy Shrimp and Grits

This was a great dish. I served it for brunch today and had to make copies of the recipe for our friends. The only thing I can suggest for those who think it is a little runny is to drain the tomatoes and green chilies before adding to the mixture. Then it is perfect. The recipe didn't specify to do that.

Skillet Meatloaf

I would have given it 5 stars, but I changed a couple things. I added a teaspoon of Worcestershire sauce as suggested by others and used a small jar of Marinara Sauce instead of the Tomato Soup. It made the meatloaf richer and spicier. I also browned the meat on top of the stove, then put it in the oven for 45 minutes uncovered. It was delicious with mashed potatoes and green beans. Will make it again soon. Thanks for the recipe.

Alfredo Sauce

This is great in a tuna casserole. Note: The easiest way to make sure the egg doesn't curdle in the hot mixture is to beat the egg yolk slightly and add it when you add the whipping cream. That way the egg cooks along with the cream and butter and will not lump. This is good to remember when you are making puddings, cream pies, creme brulee, and any sauce that requires an egg.

Creamy Dill Dip

I love this recipe. My family and friends thinks it is great. They all ask for the recipe. The only think I do differently is - I add a tablespoon of chopped fresh dill weed. It adds lot of flavor and looks good too. My husband puts it on his smoked salmon with tomato and capers. He gives it 5 stars as well. Thank you for a great dip.

Chicken Marsala

My whole family loved this recipe. It is so easy and I think I will take some of the suggestions and add heavy cream to make it creamier for pasta. I serve it with garlic mashed potatoes and either green beans or peas.

Easy Red Velvet Cake
