Italian Bread Wedges

These are amazing! I made them for dinner one night when my mother in law was over and we ate almost the whole batch! Then they liked them so much they made me make them again the NEXT DAY (!!!!) to take to a party, where they disappeared nearly instantaneously.... :) Delicious. I will make these again and again.

Meatball Grinders with a Yummy Sauce

We really liked this -- my hubby LOVED it. I added the apple jelly to taste, a little at a time till it tasted right, since a lot of the reviews said it was too sweet.

Potato Curry

This was soooo delicious! I grew up in SE Asia and this totally hit the spot for me. I doubled (or maybe even tripled) the spices, especially the spicy ones, and also added a can of chick peas because that's how I remember it as a kid. I also added minced garlic at the beginning. Even my all American burger-lovin' hubby gobbled this down and said I can make it again. I served it with homemade naan. Wonderful!

Never Fail Applesauce Spice Cake

I thought this was spectacular, but my husband didn't care a whole lot for it, hence the 4 stars. I only had a little bit of feta but it was still delicious! Yum!

Fusion Hummus

Personally, this was too vinegary for me. The only thing I liked about the vinegar was that it reduced the astonishing amount of salt I always seem to add to my regular hummus recipe. However, taste-wise, I prefer traditional hummus...

Honey Wheat Cookies

YUM! These are so good even my hubby gobbles them down. I didn't have wheat bran or germ, so I ground up some flax seed and subbed flax meal. I did cut the amount down a little bit, because I also ground my own wheat flour, so had a little bit of wheat germ in there anyways. I also added some chocolate chips -- I know, not as healthy, but my boys are chocoholics! Next time I will try without though, and also try subbing some applesauce for about 1/2 the butter to see if these remain as delicious as they are now!

Magic Peanut Butter Middles

Quick Gnocchi

For quick gnocchi, this was absolutely incredible! My husband and I discovered gnocchi shortly after we married at a little Italian hole-in-the-wall not far from where he was stationed. We both LOVED it and have ordered it nearly every time we eat Italian! This was my first attempt at making it homemade. I agree with some others that it isn't quite as tender as in the restaurant, but I think I may have over-kneaded my dough too. It's a bit of a mess to make but I had a happy hubby, so I'll come back to this one again and again! Tip: after rolling out my "ropes," I snipped off gnocchi-size bits with my kitchen shears -- MUCH easier than a knife. Also, lay your gnocchi separately on a floured tray or cutting board before you boil -- I heaped mine in a bowl and they stuck TERRIBLY! I had to re-roll and re-cut them. Thanks for a great dinner!

Stuffed Green Peppers I

These were pretty good! I just added half a can of undiluted soup to the mix, then poured the rest over the top as stated. It wasn't dry at all this way, as some others said! I did not use a second can of soup at all. Overall, these were very good, but not something I'll make super often -- I ended up cutting my pepper into bite size pieces and eating it like a casserole to make it less overwhelmingly "pepper-y." :) But it is, after all, stuffed PEPPERS! :)

Greek Pasta Salad

My mom gave me an extremely similar recipe that is one of our favorites! The only difference is that it adds chopped pepperoni -- YUM! My version doesn't call for cucumbers but I'm going to try putting them in next time, because it sounds delicious! This is to die for with the pepperoni in it!

Cake Mix Cookies IV

Apparently I'm the only one who had never heard of these... I needed a dessert in a pinch and came across this recipe. I typically don't keep cake mixes on hand, but someone had given us a couple, and so I made these cookies. I was pretty unimpressed (you just can't beat homemade), but everyone else loved them and seemed to have grown up on these cookies... I guess I have my mom to thank for my wholly made-from-scratch roots! If it was just me, I'd probably give this three stars -- two for taste and one for ease of preparation. But given the fact that these were well-received, it gets four! :)

Fruit Dip II

This is SOOOO good! I made it when our cousins showed up unexpectedly. It disappeared! I read a lot of the other reviews to add cool whip and a splash of lemon/orange juice, and so I did, but I didn't think the cool whip added anything spectacular to it. It was good with or without. I used strawberry cream cheese. My cousin liked this so well that his wife ended up using it as frosting on his birthday angel food cake the next week! I will come back to this recipe again and again, especially now that it's summertime!

Amy's Barbecue Chicken Salad

This was a delicious cold summer dinner! I added chopped red pepper and a hard-boiled egg, used frozen corn, and omitted the cilantro (we don't like it). I also used light Ranch and couldn't tell at all! Next time I'll try fat-free to cut back on fat even more. We used crushed tortilla chips in lieu of the french fried onions. I mixed up a quick southwestern seasoning blend I found online and seasoned the chicken with that before grilling. Yum! We will use this one a lot this summer!

Neat Sloppy Joes

These were very good but did lack a certain "wow" factor... haven't figured it out yet. I will probably stick with the basic recipe and adjust it a little more next time. I was missing "zip," and couldn't figure out how to add it. I upped the vinegar just a bit and added a squeeze of mustard, but somehow that didn't quite do it. I ended up adding some bbq sauce, which made this delicious, but I was wanting regular sloppy joes, not bbq sloppy joes. Anyhow, hubby loved them and that's the important thing! My only changes were to use ground turkey instead of beef and some tiny chopped cooked carrot and celery seed instead of celery. We didn't have any celery on hand and don't particularly care for it. We did go ahead and add green pepper b/c we have no green pepper haters in this house. :) Overall, a yummy quick dinner!

Southwestern Egg Rolls

YUM! These are a favorite Friday-night movie dinner for us. We use the egg roll wrappers, and I usually double or triple the filling to make extra for the freezer. I always bake them, and they are always delicious!

Slow Cooker Chicken and Dumplings

Five stars for easy, and also because my hubby LOVES this dish! It is a four-star dish to me, but quick, easy, and my family could eat it once a week and be happy. I always add lots of veggies (I know -- this makes it more like chicken pot pie but we like it!), and plan on using homemade biscuit dough next time. (I've been too afraid to try it so far)... I make most of the suggested alterations by other reviewers and this always turns out great!
