About this Cook
I have a big family, so I'm slowly learning how to cook big meals that everyone will enjoy. I have four kids, all with very different tastes so making sure everyone has something they like can be a challenge. I'm really enjoying expanding our menu, and learning how to cook new things.
My favorite things to cook
My husband calls me the cupcake momma! I *love* to bake! I also love finding recipes that remind my husband of his mothers cooking. Nothing feels as good as cooking a meal that everyone just gobbles up!
My favorite family cooking traditions
My favorite part of cooking is filling our table with a huge tasty meal and having all six of us gather together and share our day and spend time together. It is definetly the best part of cooking for me!
My cooking triumphs
My biggest triumphs come with every new recipe or technique I try. I used to not even be able to touch meat so now creating big flavorful dishes that the family enjoys is a wonderful feeling!
My cooking tragedies
The worst food tragedy I can remember is when my son was a newborn I made this big batch of fried chicken and mistakenly put foil over the pan when I put it in the oven. Oh wow, it was awful, rubbery and wet. Yuck!!!

Ellen Szaller's Mashed Potato Pancakes
I made these in a pinch with instant potatoes and everyone enjoyed them. I omitted the spices and corn syrup and added a bit of extra milk and green onion in addition to the white onion and some onion powder, since my husband loves these oniony.

Lemon Curd
This is the perfect balance of sweet and tart for me. I have made it in the microwave, which works. But for me, double boiler is the best. I made this to pour over some no bake cheesecake.
