About this Cook

I'm a busy mom of 2 boys. August-May I am a middle school teacher and in the summer months I am a happy SAHM. My husband did most of the cooking in the beginning of our relationship, but a few years ago I started to experiment and I found my passion. While I am working I usually only have time to cook quick meals, but on the weekends and during the summer I like to challenge myself!

Slow Cooker Chicken Taco Soup

I am always looking for slow cooker recipes where you just throw the stuff in and leave it! I hate those recipes where you have to basically cook the whole meal before you put it in the slow cooker. This one fits the bill and it tastes great! I will be making this one often!

Cheesy Polenta

Used this recipe to make polenta for the first time and it was a hit! I stuck to the cheddar cheese because I wasn't looking for a parmesan flavor. I served it with steaks and baked potatoes. Will make this again!

Cocktail Meatballs I

I only used the sauce part of this recipe and opted for frozen meatballs. The sauce came out great. I added some Worcestershire sauce and salt and pepper. My husband loved these!
