Cathy's Creamy Chicken Bake
MMMM..very tasty. I made a few changes though. I didn't have swiss cheese so I sprinkled a layer of shredded chedder and mozza on the chicken breasts, then combined 1 can of soup, 1 cup of sour cream, 1/2 cup of sherry because I didn't want to open a new bottle of wine and then I omitted the butter. The stuffing crust was a nice touch to this recipe. I served it with broad egg noodles. My boys raved about it!

Double Cheese Casserole
Rave reviews from my family! I first made this exactly how the recipe reads and it turned out well, however, we do lots of leftovers for lunches and the noodles were really mushy the next day. The second time I made it I subbed the noodles for steamed shredded cabbage…it was a big hit again.

Ten Minute Enchilada Sauce
Excellent! I was out of tomato sauce so I subbed a can of tomato paste mixed with a can of water and I ended up being low on chili powder so I had about ½ of what was suggested. It turned out really well and we’ll definitely spice it up when I have more chili powder on hand.
