Morning Glory Muffins I

I added some fresh nutmeg, used applesause instead of apple butter, and topped them with some brown sugar and oatmeal. They were a hit and even the teenagers devoured these muffins.

Light Oat Bread

Light, fluffy, a great loaf of bread. It was gone before noon. Even with a larger bread machine, keep the measurements as weritten. In my two quart machine, it still worked better with the measurements found in the original recipe. I did not have luck scaling it up to a larger size.

Meringue Kisses I

Hot Chocolate Mix II

This is my favorite hot chocolate mix of all time. It makes a great gift for the holidays. We make it by the bucketfull and package it as Snowman Soup.

Best Carrot Cake Ever

I am not a nut person, so I put a few extra raisins in instead. This cake is rich, moist, delicious, and I don't feel all that guilty eating it. For a smoother texture, it's worth the effort of shredding your own carrots and not buying the pre-shredded ones at the grocery store. They come out crunchier. This cake has become a staple at our Easter lunch.

Thanksgiving Leftover Casserole

This was a good use of my Thanksgiving leftovers. My kids all ate it, I could hide vegetables in it without them getting upset, and my husband went for seconds. I made this earlier in the day then put it in the refrigerator. I heated it in the microwave for five minutes before putting it in the oven. I also put a thin layer of leftover yams on top. It gave it a nice zing.

Nutty Crispy Sugar Cookies

Very tasty with a nice dry crumb. I used almonds instead of walnuts because that's all I had in the cupboard. Next time I want to try it with pecans. I took a few and dipped half in melted chocolate. They disappeared quickly!

Sausage Balls

I made these sausage balls with a savory sage sausage and they were eagerly eaten up by my extended family. My husband suggested they would taste great dipped in a warm mustard sauce which I'll definately try next time. I made these sausage balls two days in advance and then froze them. I baked them for an extra five minutes and they turned out fine. This helped shift prep time to far before my guests arrived.

Pumpkin Cheesecake in a Gingersnap Crust

Raspberry and Almond Shortbread Thumbprints

Excellent! Loved by all in my home. I substituted a half and half mix of vanilla and almond extract in both the cookie and the glaze instead of using the almond extract at full strength. My almond hating daughter was none the wiser and the rest of us still enjoyed a hint of almond flavor.
