Green Tomato Relish

This was my first adventure in canning and I couldn't be happier with the way it turned out. My only regret is that I didn't have more green tomatoes so I could make a second batch!

Sassy Sausage and Black Bean Soup

I have been using a variation of this recipe for years and I love it. I substitute lean ground pork for the sausage and use low sodium broth and tomatoes to cut some of the fat and salt. I also add in chopped baby spinach near the end... It's fantastic!

Dumplings

My mother never made dumplings with her chicken soup -- she said they were too much work. I was really surprised because this is sooo easy! I doubled the recipe and even added some poultry seasoning to the dough... They turned out nice and light... My husband thought he'd died and gone to heaven!

Jo Jo's Favorite Banana Muffins

Very yummy!...not a bit dry... Although mine cooked in considerably less time than the recipe called for... approx 20 minutes... Maybe that's why the other's were dry. I did get 18 good-sized muffins out of the batch!

Dora's Christmas Cookies

Not a very sweet or flaky cookie.... But perfect for icing. The dough was easy to handle and was very sturdy for cutting shapes.

Day Before Mashed Potatoes

I made these for Christmas Dinner... Everyone raved over them... but complained because they disappeared so quickly! I didn't have any onion powder so I used fresh chives...

Honey Baked Chicken II

I loved the nice golden brown skin... A little on the greasy side though... Next time I make it with skin-on chicken, I'll leave out the butter!

Salisbury Steak

I didn't have any french onion soup so I used beef stock and cut up and sauteed my own onions. I also threw in a can of musroom pieces... and thickened the sauce using some corn starch... yummy with mashed potatoes!
