Brown Sugar Meatloaf
Fantastic as is. This is my go-to meatloaf and everyone - even non-meatloaf types - love it. I've been told this is the only one I'm allowed make. But here is a substitution: Oatmeal for cracker crumbs. Really, you can use any filler or filler mix - crackers, bread crumbs, oatmeal. But that oatmeal is a great way to sneak in some extra fiber. Another technique tip I picked up is that after it's all blended kind of pick up the mass and drop/throw it down. It's fun and it helps ... condense ... for lack of a better word the meatloaf. My family likes it that way, but YMMV (your mileage may vary).

Tuna Piccata Pasta Salad
This recipe will likely become a quick/cheap staple for my house. As many do, there are a few mods: Used elbow macaroni and when it was done cooking and drained, I added a bag of frozen peas. I let that sit while I put together the sauce and then mixed it up. It makes a great standard tuna salad recipe alternative -- not too much mayonnaise and no dang hard-boiled eggs!
