Shrimp Francesca
I've made this a couple of times. Second time I added fresh spinach and 1/4 cup white wine and liked it much better with those additions. The white wine gives it more of a sauce when you serve it with pasta or rice. Very yummy and quick to the table!

Chicken and Snap Pea Wild Rice Salad
I used white wine vinegar since I didn't have tarragon vinegar, used raw snap peas and added some sliced red grapes which were a very tasty addition to the flavors. Very versatile recipe. Everyone loved this at Christmas 2011 as a side salad.

Double Tomato Bruschetta
Totally yummy. Let the topping marinate in the fridge for a day. This is heaven.
