Calabacitas Con Queso - Zucchini with Cheese
This was just okay, definately needs some spices. I added garlic, a chipolte chile in adobo, and green onions and it still seemed a bit bland. Left out the sugar, didn't add as much cheese. May be okay with some tweaking.

Party Pinwheels
I'd give this 3.5 stars, but I served them at a dinner party and people loved them. I do think they have a bit too much cream cheese, would reduce it a bit next time. You can rinse the olives to get rid of some of the salt as these can be a bit salty.

Pico de Gallo Chicken Quesadillas
I thought this was a great recipe. I let the pico sit for about an hour before making the quesadillas. I tried baking them in the oven like others suggested, but it never seemed to crisp and come together. Next time, I will definately cook on stove top.
