I'm a culinary arts graduate from Walter State Community College in Tennessee. During school my particular focus was becoming a Patisserie (Pastry Chef). I studied and later apprenticed under Executive Chef David Babey who is a graduate of the C.I.A. in Hyde Park NY. After graduating I worked as a Pastry Chef for Marriot for about a year, and then opened my own catering business. In 2003 one of the instructors from school approached me about going into business with him in a custom bakery specializing in wedding cakes & gourmet confections. The business was an immediate success. Currently I am the sole owner of the business after my partner moved back home to New York.

Just about anything, but I deffinatly lean toward the sweeter prizes of food.

Thanksgiving!! Buy far this is my favorite holiday and I just love spending time with my mom in the kitchen.
My cooking triumphs
I once had delivered a wedding cake to a reception and the bride has set a place up with a wooden trellis as a backdrop. What she failed to do though was to secure it. There was a central air duct right above it and when the air kicked on it blew the trellis over right on top of the cake. The top of the cake was totally destroyed. Luckily I had a couple stand by cakes still in the freezer just for emergencies like this. I cut the cakes down to proper size and redid the top. I made it back to the reception and got the cake back in place 30 seconds before the guests started arriving.
My cooking tragedies
This would have to be an attempt at baking some homemade bread for some friends. First mistake was getting the water to hot and so I had a massive yeast massacre. I didn’t know this though until later. Next part of the disaster was bumping the mixer on too high and flour went everywhere. I mean it looked like a flour factory had exploded in the kitchen. Well, after cleaning up the mess I discovered that the dough didn’t rise like it should have. Frustrated I decided I would bake it anyway. Well instead of serving my friends a nice soft loaf of bread, they got a brick instead. Honestly this thing was hard enough to have knocked a hole in the wall. In fact the guys actually tossed the thing around like a football. Oh well, the best lessons learned are from our own mistakes. Well at least that’s what I keep telling myself.
