About this Cook
I'm a very eclectic girl, moderately tattooed with a quirky sense of humor. People are always surprised at the fact that I LOVE to cook! My idea of a perfect day is picking fresh veggies out of my garden and spending the day creating masterpieces hanging with my pets and surprising hubby with the dishes I come up with.
My favorite things to cook
Give me some fresh veggies and I'm in pure nirvana coming up with new ideas. I love all types of cuisine and especially enjoy fusion cooking - blending Asian w/ Mexican flavors, etc. My new favorite ingredient is TVP since I'm a vegetarian.
My favorite family cooking traditions
Being from the South originally, my heart belongs to those Southern basics I grew up with, but making them my own with a vegetarian twist. Less is sometimes more with Southern foods, and I love letting the main ingredients take center stage - things like corn, tomatoes, biscuits and those oh so decadent desserts like my grandmother used to make!
My cooking triumphs
I think I've done very well making normally meat based dishes using meat substitutes - specifically my "meat faux-f" as I call it...meatless loaf made with TVP. Even my meat eating hubby loves it!
My cooking tragedies
I do tend to over salt - I'll admit it...so my nice, fresh San Marzano red sauce once was so salty you could sail a ship in it! I often forget that other people don't quite love salt the way I do...lol.

Vegan Pancakes
Awesome pancakes! I used Bisquick and added the sugar, water & oil and these came out SO good. Very light and not the heavy, filling pancakes the ones with eggs and milk usually end up as. I also added fresh blueberries and topped them w/ fresh peaches and strawberries. I'll be using this recipe from now on! Thanks for posting it.

Easy Lemon Bars
I just made this recipe for a Mother's Day brunch and it turned out beautifully! Very easy, yet very tasty as well. Very subtle on the lemon so it's not overpowering. I am so pleased with these that I will definitely make them again. Couldn't be happier!!

Grandpa Gunn's Raw Veggie Dip
I thought this was a very tasty dip and my guests enjoyed it as well. I used equal parts mayo and sour cream because I like the sour cream taste. I also was out of curry powder so I just used the entire package of Italian dressing mix. Great snack for watching tv or just munching. I'll definitely make this again. Most ingredients are always on hand and it's quick and easy to make.
