Red Enchilada Sauce

Fantastic! I simply replaced the tomato sauce with tomato paste and it was wonderful. Great taste and consistency. We had it over tamales last night and are having it with enchiladas tonight! I won't buy or make any other sauce for a while, I'm sure!

No need to find another dough! I stopped searching after finding this one. Easy to experiment with by adding in some extra spices if you like a more flavorful crust, but the consistency is perfect.

Southwestern Macaroni and Cheese with Adobo Meatballs

I personally liked the macaroni and cheese a lot, but hubby and kids did not. No one liked the meatballs. That's a lot of seasoning for the amount of meat, and I followed the recipe to a tee except I used dried cilantro had no jalapeno pepper powder. I did not, however, have any problems with it being runny, just be patient and let the cheese melt and stir. It was the perfect consistency! I'd love to make the mac & cheese without the meatballs sometime because I thought it was a great mexican-type dish all by itself. I also supplied the photo.

Slow Cooker Bananas Foster

Fantastic! Hubby and I both loved it and I'll be making it again! I followed the recipe exactly except I omitted the coconut, and it's a must to serve with a little vanilla ice cream. It really smoothes out the flavor, just irresistable. I uploaded a photo of mine. It actually got cooked 1/2 hour or so longer before we got to dig in and was just fine, just remember to stir a little so that it doesn't get stuck on the edges or dried out. Definitely a keeper!

Chicken Cordon Bleu Casserole

Very good! Everyone liked it, even the kids; 5 and 3. Simple, easy and fast. Great for days when you need a good quick meal, and it's also flexible. I used a little less chicken and a little more ham because of what we had available, and I'm sure it's great no matter the measurements. Thanks for the recipe, we'll be reusing this one!

German Christmas Gingerbread

Spactacular recipe! I didn't change anything except for not adding the almonds. This tastes excellent just the way it is. I took it to my son's preschool for a special snack and it was loved! I am making it again for Christmas right now. Only note I have to leave is that I used loaf pans and it definitely makes more than two! It overflowed all over, so now I am making it into four loaves, two cups of batter each. We'll see how it turns out!

Macaroni and Cheese V

Very good! Simple and easy to modify to your liking... I used small shells instead of macaroni. Omitted the onion, added a little more flour for thickness and a little more mustard. Doubled the cheese and used Fiesta Blend. Topped with crushed Cheez-Its with butter, much less than what asked for, just a sprinkling. It turns out thicker than creamier that way, but I love it and so did the kids!

Chicken In Sour Cream

Delicious! Hubby and I devoured it! I didn't change a thing in the recipe, and if I did, it would only be to make a little more sour cream topping so there was more to go around, especially on mashed potatoes. I found a wonderful sour cream potato recipe that went with this perfectly, especially with the sour cream from the chicken. Will definitely make again!

Cranberry Chicken I

AWESOME! I LOVE this recipe, and even my two year old and very picky four year old liked it - he had thirds! I took suggestions and only used one onion packet and whole cranberry sauce. I actually used Kraft FREE French dressing and chicken thighs for this and it was delicious. Perfect combo of flavors, a little sweet, not sour, but a little kick. Will definitely be making this again!
