Fiber One® Chocolate-Peanut Butter Haystacks

Reviewed: Feb. 12, 2012
These were ok, but we had a hard time with the grittiness of the cereal. If you like Fiber One cereal, you won't mind the texture and you will love these! I did add a little extra peanut butter (organic PB), and also some dried cranberries which were a real nice touch. A few reviews stated they were melt-y so I put each serving in little baking cups.

Spicy Beans 'N' Rice

Reviewed: Feb. 10, 2012
I cut the recipe in half and only used a can of kidney beans, skipping the butter beans. There were a lot of beans compared to the rest of the ingredients. Definitely spicy, yet not enough flavor. The recipe is missing something very important: salt! Salt helps bring out the flavor in food. Even with a little salt it was much better but still lacking. The fennel and Italian seasoning were almost entirely lost in the dish, but the cayenne was quite prominent.

Herbed Cheese Puffs

Reviewed: Feb. 10, 2012
I took simple street and just spread the topping on whole Pillsbury Grands JR biscuits. Instead of grated cheese, I used fresh shredded. Also had to use dried herbs. My husband seemed to really like them and rated them a 5. I thought they were alright, more like a 3, so I'll give them a 4 overall.

Red Beans and Rice

Reviewed: Feb. 8, 2012
I felt there weren't enough beans compared to the sausage, the rice servings are skimpy, and it definitely needed some sort of flavor boost. I would throw some minced garlic in with the onion and pepper saute, and also add some Cajun or Creole seasoning for next time. Smoked sausage is great, but it doesn't provide enough flavor to carry the whole dish on its own.

Chicken Biscuit Pie

Reviewed: Jan. 31, 2012
My biscuits were too brown on top, completely undercooked and runny underneath, there was too much biscuit in comparison to the filling, and not enough sauce. Followed the recipe as written.

Zesty Broccoli

Reviewed: Jan. 31, 2012
Good, but I didn't find it to be all that zesty. I didn't bother to drain the water, I just quickly cooked it off. Topped with a little Parmesan cheese. Hubby ate it so that's good!

Garlic-Lemon Double Stuffed Chicken

Reviewed: Jan. 31, 2012
I let the cream cheese soften then spread it in a pocket cut into the chicken and sprinkled with shredded cheddar. I also had some cooked bacon bits I stuffed in there as well. I sprinkled the garlic salt on the chicken before coating with an egg/milk mix then the crumbs/cheese. For the melted butter, I didn't have a lemon so I used lemon pepper and herb seasoning. I did use the paprika too. This came out great!

Golden Potato Soup

Reviewed: Jan. 31, 2012
Yummy soup, though I did make a few changes, which I feel only improved upon the recipe for my preferences. I used bacon, not ham. I cut the bacon into 1/4 inch strips then cooked till crispy. I let the bacon drain on paper towel till called for. I drained most of the grease then sauteed the onions and celery in it before proceeding with the recipe. I also used cheddar, not American cheese. Next time I will add a clove of minced garlic at the end of the saute, and increase the chicken bouillon (I will probably omit the salt with more bouillon). Came out very good.

Saucy Pork Chops

Reviewed: Jan. 26, 2012
The maple syrup stood out much more than I expected it would and make it a bit too sweet. Toned down, this would be very good. I used real grade A dark amber maple syrup (the best!).

Sweet and Sour Drumettes

Reviewed: Jan. 26, 2012
A bit too sweet for us. I had even cut out some of the sugar. Didn't have much sour taste either, just sweet. Also, the flour coating was nice and crisp out of the pan, but once out of the oven, it was soggy.

Ginger Veggie Stir-Fry

Reviewed: Jan. 26, 2012
Didn't taste any ginger at all. Tasted WAY too much like orange juice. Only change was didn't use sweet potato but added bamboo shoots, other than that, followed recipe as written. Sorry, we could only take a bite of this and we were done.

Pasta Hot! Hot! Hot!

Reviewed: Jan. 22, 2012
As written, I think there is too much pasta, so I cut the amount in half and used the same amount of sauce. I also used half butter and oil, upped the red pepper to make it 'hot' (for those who avoid spicy foods, this isn't that spicy. I don't care for too much heat and I enjoyed it even after adding more). I also added some parsley. This made a great side dish, thanks.

Easy Honey Mustard Mozzarella Chicken

Reviewed: Jan. 22, 2012
I really liked this. I used prepared honey mustard since it was in the fridge, spreading it evenly over the chicken, and I cooked my bacon in a skillet before topping the chicken (then I used the bacon fat to saute a side dish). Hubby said it would have been better had the chicken been wrapped in bacon, but I think he just wanted more bacon!

Spiced Hot Chocolate

Reviewed: Jan. 22, 2012
Rich? I didn't find this to be rich at all, in fact, it tasted like watery spices so I added more cocoa. I agree with the other reviewers who mentioned lightening up on the cloves just a bit. I recommend straining the mix before pouring into mugs as it can get a bit gritty towards the bottom. Pretty good, but needs some tweaking.

Portuguese Chourico and Peppers

Reviewed: Jan. 20, 2012
I actually made this in a skillet for a quick weeknight meal. Started with chorizo then added onion, peppers then garlic. I deglazed the pan with white wine (personal preference) and then used some chicken stock and let it cook down a little. I added the tomato paste when I added the stock and also threw in a can of diced tomatoes. I don't like green bell pepper so I used sweet yellow and it was pretty good over rice. Thanks!

Belly Burner Chili

Reviewed: Jan. 18, 2012
I used pork chorizo. My husband really liked it, but I didn't really care for it. I did enjoy the black olives, but overall the flavor wasn't Wow. I also prefer more beans in my chili. Good for people who prefer a meatier chili with a spicy kick.

Pork Barbeque

Reviewed: Jan. 18, 2012
Definitely NOT the 'best pork barbeque recipe available.' It tasted like bell peppers and ground pepper, and as I was eating it I was thinking it wasn't cooked on the BBQ and doesn't taste anything like BBQ. I had to smother it in homemade BBQ sauce to eat it. The pork did have a nice little kick to it though. I'm really sorry, but this just didn't tickle my fancy. This would be a great pulled pork recipe for folks who don't like BBQ sauce.

Red Bean Vegetable Soup

Reviewed: Jan. 16, 2012
This was rather good, with a few changes. I felt there was hardly enough liquid to be a soup as my veggies weren't even covered, so I about doubled up on chicken stock. I also wasn't getting enough flavor out of the soup so since I increased liquid I ended up doubling the salt & pepper and then QUADRUPLED the Cajun seasoning. However, I recommend you check the salt content of your chicken broth and Cajun blend before you do the same. Right before serving, I stirred in a little bit of cooked star-shaped pasta. I did not cook for 6 hours, and I think the canned beans would've turned to mush if I had. Hubby really liked the outcome but said he would've enjoyed the addition of potatoes. I think some sausage coins cut into little wedges would be nice, too.

Starr's Savory Meatballs

Reviewed: Jan. 16, 2012
Good meatballs; used for subs. I felt the portions were HUGE, double my typical portion anyhow, so I ended up freezing half. I had even halved the recipe! I think you could get 8 servings if served in sandwiches or over spaghetti out of 2 lbs of ground meat. I used ground turkey and added more Worcestershire b/c I think it helps 'beef' up the flavor when using ground turkey in recipes calling for beef (I find it makes turkey less noticeable to the usual beef-eaters). I made the meatballs a bit smaller than directed, and they were perfectly cooked after 15 minutes. Good balance of the onion, garlic and spices. Thank you!

Whipped Cardamom Sweet Potatoes

Reviewed: Jan. 15, 2012
These weren't bad. I love sweet potatoes and love, love, love cardamom, and while they went nicely together, there was a little too much cardamom and my husband kept saying they tasted dessert-y. Also, for texture and ease, I just mashed the potatoes with a fork since they were incredibly soft after roasting. When you try these, cut back on the cardamom, but just by a pinch or so.
