Supreme Apple Butter

YUM! This is excellent apple butter. I used the crock pot and let it go overnight and beyond. I skipped the ginger and added an extra tsp. of cinnamon. I also substituted apple cider for the brandy. When it was dark brown and the consistency that I was looking for I then used an immersion blender and made it smooth, canned it, and used a boiling water bath for 25 minutes. My kids loved it. The ultimate compliment was when my son said, "it tastes just like Silver Dollar City apple butter". That is our favorite! Thanks for the yummy recipe.

Banana Streusel Muffins

These were very moist. I did not follow the original recipe the first time and instead added extra spices as suggested by another reader. I think I would like them much better WITHOUT the extra spices. Somehow the banana with the cinnamon and the nutmeg didn't seem to go too well together. I will probably add some toasted pecans to the batter and/or the struesel next time. I think oats would also be very good in the topping. You can substitute whole wheat pastry flour for all or half of the white flour called for. It really doesn't change the consistency, but it helps get more whole grain into your diet. Thank you for this recipe! My kids really enjoyed them!

Big Soft Ginger Cookies

These were soft and very yummy! My kids LOVE ginger cookies. I did NOT chill the dough as others have suggested. I just used my medium-sized scoop and put the drops right onto the cookie sheet. I then dipped a cup into some sugar and GENTLY pressed each cookie, leaving the sugar only on the top. I made these to take along on a road trip and they went very fast. I will definitely make this again. They are a new family favorite!

Chicken Cordon Bleu II

This was a big hit at our house! I browned my chicken in half butter/half olive oil to help keep the butter from burning, as well as for the health benefits. I don't really care for the taste of wine so I just substituted chicken broth instead. I also did not have any heavy cream at the time, so I just substituted milk. This helped make it a bit healthier as well. I will definitely make this again. It was an instant favorite with our five kids!

Caramel Apple Jam

YUMMY!!! Came out perfect just as written. Tastes a lot like apple pie filling. I made a batch tonight and will make another tomorrow to give as Christmas gifts. It looks beautiful in the jar! Thank you for the wonderful recipe!

Garlic-Lemon Double Stuffed Chicken

This recipe is so yummy! I originally made it for company, but it has now become a family favorite. I do cut the cream cheese in half and I always use light cream cheese. Also, I only use about 1/3 the amount of butter called for. Otherwise, it is swimming in butter, which is unnecessary and adds a lot of fat to the recipe. Also, I add more garlic , as we love a lot of garlic! This is A fantastic recipe!!!

Chicken Tortilla Soup IV

This was hearty and satisfying. I just had to add a bit more seasoning for my taste because I like things with a lot of zip. Overall, I enjoyed it very much and will definitely make it again.
