Cran-Apple Muffins

This is a wonderful muffin recipe! My chocoholic 5-year-old who wanted "chocolate chips" in them and who is a picky eater, loved them and ate quite a few! (I baked them in mini-muffin size tins for 10-11 mins.) I had neither whole cranberry sauce nor orange zest, but the jellied cranberry sauce and orange jucie concentrate substituted quite nicely. The only change I would make is in the technique. I would mix the apple chunks I cut them instead of grating them) in with the milk, oil and egg before adding the wet ingredients to the dry ingredients. That way, less mixing is necessary, and the muffins will be lighter and less dense. Overall great recipe! My teenagers down to toddlers loved it, as well as my husband and I! I will definately make these again!!!!!

Kielbasa Fried Rice

This turned out very good and even my picky 5 year-old ate some! I have always made a similar recipe, but liked the addition of cabbage. The only thing I did different was to pull the veges to one side of the pan, add a bit of butter to keep them from sticking, and cooked the beaten eggs before mixing them with the veges and adding the rice and soy sauce. Like another reviewer, I tried it with chicken and loved it that way. It would also be very good with the kielbasa. I will try it that way when I have some. I like adding frozen peas at the end as well. Very good way to use leftover rice!

Pigs in Blankets

My children raved about these! I have made these a couple of times, and the first time I made them as written, but the second time, I added a bit more cornmeal, for a greater cornmeal taste. I use the Biscuit Baking Mix that is found on this site, and replace the shortening with canola or olive oil.

Southwestern Fried Rice

I used left-over brown rice (that I freeze and use as needed) in this fun recipe. I just reduced the amount of broth by half to compensate. The only kind of chicken I had was breaded, so I baked that separately and served with it. I did skip the last ingredient as I have two toddlers that needed to be able to eat this, too. It was plenty spicy with just the homemade salsa that I used in it. I will make this again!

Old-Fashioned Potato Soup

This is a very yummy, hearty soup. I didn't have chicken broth, so I did like another viewer suggested and put the potatoes in with onions after they were translucent, then added water. I mixed dry milk powder with the flour and added to water when potatoes were cooked. (I didn't have carrots, either, but it would be really nice with them.) I seasoned the soup as stated, except I forgot the thyme, and I added garlic powder to boost the flavor. It was really good, and would be even better served with chopped bacon pieces and cheese like others recommended! Good, fast and tasty is always what I need, and this fit the bill nicely!

Turkey Cabbage Rolls

I LOVED this recipe,the cabbage, the filling, the sauce - everything!!! I will make this again! My mother-in-law came over and I gave her a taste. She said she would eat half a roll, but ate the whole thing instead, and now she wants the recipe!! Complete success!! I thought this recipe was a wonderful way to use leftover rice that I had already cooked. I used 2 cups of cooked brown rice in the filling, along with the other ingredients as listed, adding some garlic and parsley as well. In the sauce, I took the advice of another reviewer and used all tomato sauce (because I didn't have tomato paste), instead of tomato paste and water mixed with tomato sauce. I was out of lemon juice, so I substituted raw apple cider vinegar for that and added a bit more brown sugar to help the flavor. My whole family liked the filling and the sauce, but only part of them were excited about the cabbage "wrap". So, if you like cabbage, you will LOVE this recipe!!

Cold Corn Salad

This was a really nice alternative to plain corn. I didn't have the peppers, but tripled the cucumber and added some garlic salt and a dash of lemon pepper. I also used Ranch Dressing because I got all the veges put together and found out I didn't have Mayonnaise. Ooops! It turned out well despite that and my family ate it up!

Sassy Spaghetti

This recipe was pretty good. I didn't have onion or cumin, so I gave it a big dose of garlic. I would like to try this with some chopped fresh tomatoes tossed after removing it from heat, or mixing in some salsa!

Tuna Piccata Pasta Salad

I tried this because I had most of the ingredients. I wasn't sure what to expect, whether I would like it or not, but I did like it after all. Since I didn't have Dijon mustard, I used regular mustard and added some honey to sweeten it. It all tasted pretty good after all. My family said they liked it!

Churros

This recipe is wonderful! Since, the directions and the list of ingredients showed different amounts, I had to choose what to do! I chose to follow the amounts listed in the directions, and was well rewarded. I only made one change, and that was to use 1/2 cup whole wheat flour (that I ground at home) as well as 3/4 cup white flour. The results were so good, that I had to guard the last few churros from my children so my husband could have a taste of them when he got home from work! Next time I will double the recipe!! To form the dough I used my Pampered Chef Easy Accent Decorator. It handled the consistancy of the dough very well. I tried both the small star tip and the large star tip. The large star tip worked better and was easier to use. I was able to squeeze the dough out with one hand and to cut the dough with a butter knife using my other hand. Fast, easy and delicious!!

Johnnycakes

I tried these for two reasons: 1. I had all the ingredients, 2. I was curious how good this "pioneer food" would actually be. (I have made "hush puppies" in the past and wasn't too enthralled with them.) I was pleasantly surprised at how tasty these johnnycakes really were! My husband and children really loved them. I served them with soup instead of cornbread, and the family ate them all up! Yum!

Pioneer Cookies

I was disappointed in this recipe. I tried it as written except for adding pumpkin pie spice, wich didn't spice it enough in my opinion. After baking the first batch of cokkies, I quickly added an egg to the rest of the dough to see if that made a difference. It made the cookies still puffy, but more cake-like. They were okay, but still not what I was looking for. I like my cookies flat and chewy rather than puffy and light. I will keep looking!

Adrienne's Cucumber Salad

I gave this four stars because I loved this light salad that went well with the bbq chicken, but my family didn't care for it very much. I would maybe put less dill next time (and I love dill) to see if that was what turned them off to it. It was a sweet change from plain vinegar covered cucumbers!

Chicken Pot Pie IX

Wonderful recipe! I didn't have celery, so I added onion to the chicken while it cooked and I also like potatoes in my pot pies, so I added that too. Other than that, I followed the recipe as is. It turned out very well. Instead of using a frozen pie crust, I made a basic crust recipe. Very good all together! I will make this again!

Graham Crackers

This cracker recipe is wonderful!! My kids, from my toddler to my teenager all loved them and gobbled them up! I made some plain as the recipe directs, and I also sprinkled some with a mixture of 1 tsp. cinnamon to 1 Tbsp. granulated sugar before baking. I liked the cinnamon variety better, although the plain was good too and went just as fast. I was surprised at how great a yield I got from one recipe. I tried a short cut and rolled them out directly on the cookie sheet, and then used a pizza cutter to cut them into crackers. I then broke them apart after they were done baking and had cooled a bit. The edges are a little crumbly that way, but it goes much faster. Using parchment paper would have been a great idea too, which I will do next time!

Special Cereal Bars I

I have been looking for this recipe for a long time and finally found it!! I would suggest using more cereal, though, as when I used Cheerios, I increased the amount to 8 cups, and still had the gooey peanut butter stuff pooling at the bottom. My kids loved them even though, and so did I!

Mexican Whole Wheat Flour Tortillas

Having married into a latino family, and finding out that getting recipes is very difficult because my mother-in-law cooks with a pinch of this and a little of that, I was very glad to finally get a tortilla recipe that I could make and that would actually turn out! This one is yummy and looks just like my mother-in-law's! I have tried it with different combinations of wheat and white flour and have loved them every time!!
