Orange Mango Chicken
This was SO good and easy to make. I served it over a bed of sauteed spinach w/garlic. Perfect!! The next day, I had it over a bed of organic Fresh Herb Salad. I used the sauce as the dressing. Excellent!!! I will pass this one on.

Irish Beef Stew
I made this recipe, using ingredients called for, except that I wasn't able to buy one bottle of Guinness. Had to buy the whole 6 pack. So I used a lager instead. It tasted horrible!!! I doctored it up with spices, even salsa. We did not care for this. I'll go back to making it with wine and red potatoes, spices. Major disappointment on St. Patrick's Day!!

Grandma's Lemon Meringue Pie
I am disappointed at the way this pie turned out. The filling is good, but my meringue is terribly weepy. I poured off at least 1/4 cup, and my crust is soaked! Directions don't say to put the meringue on immediately after pouring the filling into the crust.I guess it sat too long, while I made the meringue. How can I avoid this? Make the meringue before I start making the filling?
