Barbeque Tempeh Sandwiches

This was okay. It was my first recipe with tempeh, and I am thinking part of it was I am not crazy about it. The kids and my husband did like it, so it is worth trying.

Winter Vegetable Hash

This was delicious. We used mustard greens instead of kale. The shitake mushrooms were great- be prepared though, they are expensive. I kept eating this, so healthy and flavorful.

Baked Ziti I

This was good, I used whole wheat penne instead of ziti because of availability. We also make it without the meat. I will try it next time with carrots or something to substitute for the meat, that will help it be a little less "saucy". Overall very good and easy.

Vegetarian Korma

This was SO good! I plan to make it again with a substitute for cream to make it healthier. I chopped the potatoes and carrots in a small dice so they would cook thoroughly. My young kids even liked it.

BBQ Tuna Fritters

These were good! A fast, cheap alternative to a salmon patty. I used a reg onion since I did not have green, and skipped the savory seasoning and hot sauce.

Sausage Casserole

Love this recipe! Have made it 4 or 5 times, and it is delicious. If you add more hash browns it is not as crispy- a little too mushy.
