Salmon Broccoli Bake
Even though I added whipping cream, this was still pretty dry. Also, I will never used canned salmon unless I'm sure it doesn't have bones. It took forever to remove all those tiny, broken, softened bones. The flavor was good, though!

Jollyrogers' Chilaquiles
I was skeptical even after it was ready, because it's not that pleasing to the eye... but the flavor is incredible! No one even realized I used meatless chorizo. I prefer too cook the onions with the sauce than to leave them raw in the vinegar. And if you can't find corn tortillas, I'd personally suggest flour tortillas over using chips.

Crispy Chipotle Lime Tilapia with Cool Avocado Sauce
We loved the flavors of both sauces. It worked especially well with Orange Roughy fish. The only thing that didn't turn out great was the chip coating... I used a fresh bag, and ran them through the food processor, but maybe because it was a thicker chip, or I didn't crush them enough, the texture was too tough, like they were stale.
