Pumpkin Pancakes
I feel like something's wrong with one of my ingredients. The last couple times I've made this, they just will not cook in the middle, even if I cook them on a lower temp. It's like they get sealed on the outside and stay gooey on the inside, instead of getting fluffy.

Chocolate Cobbler
I found this to be delicious and forgiving! I used half wheat flour and for the topping had run out of white sugar, so substituted powdered. I let it sit for a while (during dinner) before we ate it. Texture, flavor, everything was great!

Slow Cooker Mexican Casserole
It's true, you have to be careful about the cooking time. Regardless of a little burning on the edges, though, it was pretty good. My 22-month old devoured it and kept wanting more, and even ate leftovers of it the next day. The serving sizes are not very generous.
