This recipe is meant to be a base for a muffin that you create. I added fresh blueberries and swirled sweetened cream cheese with a struesel top. TO DIE FOR! Very moist! My professional chef neighbor pronounced them "heaven", and believe me, he isn't afraid to hold back when something isn't quite right with a recipe. Will definitely make again!

Pretty good carrot cake! I only added 1 and 1/2 cups of carrots because I found that to be plenty--and I added a cup of coconut for something a little extra. The flavor and texture are really good, but keep in mind..this is a VERY heavy cake--very rich, but good!
