Spicy Chicken and Sweet Potato Stew
I'm vegan, but my son isn't. I made this exactly by the recipe except for adding the chicken. Then I divided it in half and put chicken in one half and tofu in the other. Awe inspiring! My son agrees.

Pork Chops with Apples, Sweet Potatoes, and Sauerkraut
instead of apples, I used apple sauce and poured it over the sauerkraut. then i sprinkled about 1/4 cup sugar over it and baked in a 9 X 14 @350 for about 1 hr. Excellent!
