My favorite things to cook
I love to cook italian food (homemade pasta, risotto, etc.) and desserts. Although I try not to bake too much, I will make a treat every once in a while.
My favorite family cooking traditions
My spanish grandmothers recipes- paella, empanada, tortilla de patatas! Mmm!
My cooking triumphs
My risotto (cooked the long and painful but "oh so worth it" way) is probably one of the best things I make. I combined a few different techniques/recipes to make it my own.
My cooking tragedies
I tend to always overcook fish since I am paranoid about undercooking (yes, I do realize some fish is meant to be undercooked like Tuna, but raw fish grosses me out!).

Moroccan-Style Stuffed Acorn Squash
I never made couscous before but this was EXCELLENT! I brushed agave nectar on the squash instead of butter/ brown sugar and it turned out great. I had some frozen turkey meatballs in the freezer, so I broke those up and cooked in the pan along with the veggies. I also added a little water while cooking so everything cooked a little faster. Will DEFINITELY make again and again!

Manicotti Alla Romana
SOOOO delicious! I added some mozzarella cheese in with the meat mixture and just added the frozen spinach into the meat after taking it off the heat. It thawed by the time the meat was cooled enough to add the ricottta cheese. Oh and I used about cup of skim milk instead of the half and half and it turned out just as good while sparing a few calories for this rich meal!

Delicious Ham and Potato Soup
This soup was delicious with a few "modifications". I added more celery and onions then what the recipe called for, I also added some chives and served the soup topped with cheddar cheese and real bacon bits. After making this many times I can also advise not to change the liquid amounts much or else it will over thicken or not thicken enough. To me the cheese and bacon bits really gave it a five star rating.
