Basic Easy Chicken Wings

Gave this 4 stars as is . . . but would consider this a 5-star recipe with my variation . . . I add about 1/3 cup honey to the hot sauce/butter mixture. in addition to making the sauce taste really great, it will thicken the sauce and help it stick to the chicken. Such a great, easy recipe!

Grilled Chicken with Herbs

I call this 'Scarborough Faire Chicken' - you know, parsley, sage, rosemary and thyme! The only change I make is reducing the balsamic vinegar and increasing the olive oil; otherwise, the vinegar seems to overpower the other flavors. This recipe results in extremely flavorful, moist chicken. Have even made this marinade and given jars of it away as gifts. Thanks so much for a really great grilling recipe.

Steaks with Chipotle Sauce

When I open a can of chipotles in adobo sauce, I puree them and put them in the freezer, so i can take out just what i need at the time. Wonderful, smokey flavor! definitely not for the faint-hearted. Wonderful sauce! would just suggest adding chili powder, cumin, cilantro, garlic, parsley to taste.

Harvard Beets

Mom made these when i was a kid! And that was more than 50 years ago . . . . i added a little orange juice concentrate and a little butter. Also increased cornstarch, per others' reviews. Wonderful!

French Fried Potatoes

I've always soaked potatoes in ice water before frying them to make them crispier on the outside and creamier on the inside - but the addition of the sugar really helps! Try sprinkling a little lemon juice over the potatoes and stirring them as soon as they come out of the fat. The lemon juice seems to turn a little sweet, and really flavors the potatoes.

Doggie Biscuits I

If you cut the amount of water down to 1/2 cup, this is a five-star recipe, according to my Merry! She really loves these biscuits, and I feel good knowing what goes into them. I just made my second batch, and used beef broth instead of water and added a little crushed garlic for flea control. Will experiment with using bacon grease for part or all of the oil next time. i also agree that the 2 Tablespoons of vanilla may be excessive, i cut that to 2 teaspoons. This does make a lot, and since Merry is a small dog, I cut the recipe in half. Still made 75 small biscuits.

Triple Bypasses

These are really great - something different for the grill! Recommend adding more seasoning to the ground beef - I use about a tablespoon of Cajun seasoning that I make myself (2-1/2 T paprika, 2 T garlic powder, 1 T salt, 1 T black pepper, 1 T onion powder, 1 T cayenne pepper, 1 T oregano, 1 T thyme). Also cut the bacon in half lengthwise, and use two half-slices of bacon to wrap rather than two whole pieces. Really a fun recipe!

Chicken Fried Chicken

This is my very favorite fried chicken - and so easy to do! I usually cut chicken breasts into strips, cooks faster that way. The trick to getting breading to stick is to coat the chicken with flour before you put it in the egg beat, then proceed as usual. Great recipe!

Freak'n Good Ribs

I had tweaked my own rib recipe for several years, and thought I had it down pat. Then I tried these ribs, and - WOW! They beat my ribs all the way 'round. Didn't change the ingredients, except used boneless country pork ribs. I simmered them in the marinade for two hours, then took the ribs out and boiled the marinade until it was reduced to less than one half. Mixed the marinade with the barbeque sauce (Jack Daniel's) because I didn't want to lose any of that flavor. These are, by far the very best ribs I've ever made. Thank you!

Jagerschnitzel

Was looking for something different, and tried this recipe - it is wonderful! Somewhat heavy, though, and I would recommend serving with Spaetzle rather than fries. (For all you Southerners out there, think chicken-fried pork cutlets with sour cream/onion/mushroom gravy.) Great comfort food - definitely a keeper.

Tuna-Stuffed Avocados

I tried this last night, and it was so incredibly easy, and so unexpectedly good! I did add a little basil, a few drops of hot pepper sauce and some grated Monterrey Jack cheese. Finally, I have something special to make with avocados besides guacamole.

Bone-In Ham Cooked in Beer

I made this for Thanksgiving, and it was one of the best hams I ever had! The only thing I did differently was baste it a few times with the leftover pineapple juice. So simple, and so good!

Buttermilk Fried Chicken with Gravy

Yup, that's the way to do it! You can add your favorite herbs and spices, but nothin's as good as plain ol' fried chicken. The buttermilk actually tenderizes the chicken!

Used to make something like this in Texas, but used a buncha' cheap vodka; and, in addition to the listed fruits, also used peaches, pineapple, watermelon, etc. Let it sit in the 'fridge for about four days. The liquid was potent, but the fruit was LETHAL!

Excellent basic Tex-Mex recipe! Wouldn't change a thing, except to add a little liquid (like beer or water) to the ground beef while it is browning, and use a potato masher to break it up while it is cooking.
