Wild Rice Pepper Salad

My family loved this salad. It was great for hot summer days. The raisins add just a slight sweetness to the salad and the sunflower seeds a nice texture addition. We used a royal blend rice instead of the wild rice so we only had to cook 10 minutes instead of the hour. Overall a nice light salad.

Almond Rhubarb Coffee Cake

After reading the reviews,I must be the only one in the world who feels strawberry does not go with rhubarb. I personally love raspberries with rhubarb so I added them for more flavor. I like this cake and think the topping is good.

Raspberry and Almond Shortbread Thumbprints

I found this recipe inside the label of Land O Lakes butter. This quickly became a traditional Christmas cookie at our house. I didn't change a thing.

Strawberry Spinach Salad I

I know I am just another wow! this is good but had to write. I couldn't find a raspberry balsalmic vinegar which is more our liking but did find balsalmic glace raspberry by colavita. Toasting the almonds really bring out their flavor. I have given this recipe out to 3 people and only my son has not liked it. He's the picky eater. Cutting the sugar in half was perfect for us. I really appreciate all the suggestions from other cooks.

Almond Croissants

I was very pleased with this recipe. My husband has cravings for almond paste pastries and these did the trick. I didn't plan ahead enough to refriderate the dough overnight and I don't know if it is critical but I did chill the dough for 4 hours. I also decided to spread the almond paste on the dough before cutting. I thought it would be easier than trying to spread on each wedge. The only other thing I did differently was to add an almond flavored glaze. This is a keeper in our family.

Grilled Shrimp Scampi

I also followed the suggestion half oil and half butter. I think it worked a little better but either way is excellent as long as you don't overcook the shrimp.

Chinese Pork Chops

We LOVE this recipe! The recipe doesn't say how thick the chops were and we get the thick ones so it took 20-25 minutes. I have never had pork chops taste so good and I didn't change a thing. I used my food saver marinater and 2 hours was enough time. If you like this marinade and you like seafood I suggest you try Barbeque Halibut Steaks from this web site.

Berry Trifle

My husband said this was the best new dessert recipe I've made. Not only is it beautiful to look at but it was truly wonderful. I read all the reviews and omitted the liqueur since I didn't have time to go buy some and I used cheesecake pudding as suggested by some. This was absolutely fabulous and will make it again. My husband wants me to try the recipe with fresh peaches when they in. Thank you for sharing this recipe.

Lemon Sugar Tea Cookies

These are like a mild lemon snickerdoodle. Very easy to make. Definitely chill the dough to prevent spreading. I like a tart lemon so I made a glaze of lemon juice and powder sugar. We liked them rolled in sugar but liked the frosted ones better.

Quick and Spicy Fish Fillets

Not having corn flake crumbs I crushed spiced croutons. We liked this so much I will keep making it this way. This is the best way to cook sole. Ijust used this recipe on cod so we could once again fish and chips and it was awesome! We can't eat fried foods and this worked out well. I did use less parmeasan cheese and will try using a rack on top of the baking sheet so the bottom of the fish gets crisp also.

Creole Shrimp

This is a family favorite. I use olive oil instead of bacon fat because I very rarely have that on hand and then as others suggested browned the onionfirst. I also use red,yellow and orange peppers since I don't care for green. For that extra kick a dash of crushed red pepper. The left overs are even better.
