Southwestern Pasta Salad
Just made this and it's fantastic. I didn't have lime juice so I used lemon. Can't wait to make it again with the lime. Took others advice and used only 1/4 cup olive oil and definately extra juice to give it a good bite. This would also be really good with some avacado added in at the last minute.

Baked Fennel with Parmesan
This dish was really great! I was nervous because I don't like the taste of raw fennel, but when cooked it loses that harsh licorice flavor and tastes wonderful. I did add one cup of creme fraiche and I know I added about a 1/2 cup of cheese. I have also used sour cream instead of creme fraiche and it works just as well. Great dish, I'm really glad I tried it!

Kentucky Biscuits
Wow, this was very good. I never make biscuits because they always seem so dry, not these! One thing I did do was freeze the stick of butter and then grate with a box grater (I saw this on a cooking show). That way the butter stays nice and cold for a nice tender biscuit. Plus it mixes much easier with the dry ingredients. Will definately make this again!
