Baked Potato Soup I
This recipe was fantastic!! So creamy and flavorful! I ended up using 2 cups of 2% milk, 2 cups of potato water (the water I boiled the potatos in) and 3-4 cups of chicken broth. I seasoned the broth with pepper and a cajun seasoning mix but didn't add any more salt b/c the bacon and cheese were salty enough on their own. So delish, can't wait to make it again!!

Cajun Style Stuffed Peppers
Great base recipe but it did take longer than I expected. I blanched the peppers and used Zatarain's low sodium red beans/rice mix to speep up the process plus I like their flavors. I also added cajun seasoning and some cayenne pepper and simmered for 15 min. Shrimp got added in last and the whole tihng was baked for 15 min. Baking didn't do a whole lot for the dish so I may skip that next time or just broil for a minute.

Ginger Beef Curry (Slow Cooker Version)
for some reason, this came out tasting very bitter. the beef got stuck to the sides of my slow cooker and, though the spices were very fragrant, it didn't have much of a taste.
