Blueberry Buckle

Delicious! I made a few changes based on what I had: one cup of blueberries with one cup of chopped, peeled plums; whole wheat pastry flour instead of all-purpose, and all brown sugar. I also added a squeeze of orange juice and the zest of half an orange. The cake was very light and moist; I'll definitely make this again!

Sam's Famous Carrot Cake

So moist and lovely! I baked it in one 8 inch round pan, and six mini-bundts for 30 minutes at 340. The pineapple is a particularly lovely flavor addition. I'll probably add some fresh nutmeg next time. Served with cream cheese frosting and sprinkled with toasted coconut and walnuts.

Chocolate Cappuccino Cheesecake

Spectacular! I had this at a birthday celebration with eight different cakes; this one got raves and disappeared in no time. So smooth, creamy and delicious. I also used espresso for a stronger coffee flavor. I can't wait to make this again!

Applesauce Oatmeal Cookies

Not too bad a cookie for using ingredients I had in the cupboard. Based on the reviews here, I doubled the cinnamon, used homemade unsweetened cinnamon applesauce, and zested half an orange into the dough. Without the orange, the cookies would have had little flavor. Cakey in a stick to the roof of your mouth sort of way. Not bad for a quickie, I need a cookie now fix, but not something I'll bother fixing again.

Ten Minute Enchilada Sauce

Truly delicious. I bought fresh chili powder in bulk for this recipe. Added a little cinnamon and a square of dark chocolate for richness. Quick and easy; it made my first attempt at enchiladas a great success. Thanks!

Dark Chocolate Cake II

Very easy, very yummy. I might add a little more chocolate next time, either more cocoa or chocolate chips or both, but I'm a chocoholic. :-) Really good with Chocolate Cheese Frosting from this site.

Cilantro Chicken Salad

I was looking for a light chicken salad without mayo, and this satisfied. It was delicious tossed with spinach and shredded carrots. I only shredded two chicken breasts into the lime mixture; next time I'd double the dressing if using all four chicken breasts. Added a splash of rice vinegar to the lime juice. To improve even more, I'd add a dash of sesame oil to give it a bit more Asian flavor, and perhaps a bit of minced green onion. Nonetheless excellent, and a wonderful base for ideas.

Marinated Mushrooms II

These are seriously addictive and habit-forming...beware! I halved baby bella mushrooms and used white balsamic vinegar since that's what I had in the cabinet. There was plenty of juice left over that was perfect sopped up with bread. I made these for an antipasto platter, and will be making them again for snacks, gifts, lunch...well, you get the idea. :-) I never really liked the prepared mushrooms from the deli, but this recipe has converted me.

Rich and Simple French Onion Soup

Truly rich and delicious. By necessity, I had to use chicken broth instead of beef, basil instead of thyme, and also leave the bread out for my gluten-intolerant mother-in-law. I used a generous handful of grated jack cheese on each, and had a lovely meal accompanied by green salad. Thanks for the easy, yummy recipe!

Lemon Posset

Heavenly silky texture. I reduced sugar to a cup and added a little extra lemon juice. Next time I'll add lemon zest for more tang. My family oohed and aahed for this.

Garbanzo Bean Chocolate Cake (Gluten Free!)

My mother-in-law is gluten and lactose intolerant, so I thought I'd give this a shot on her last visit. Yum! Very cakelike, good nutty texture and taste from the beans. I think I would change it by adding a bit of vanilla, and using bittersweet chocolate, but otherwise it's great. I'm going to keep making it for myself even though she's gone home. :-) Make sure the flour you use to dust the pan is gluten-free, or even better, use cocoa instead.

Wine Jelly

The best way of using up unwanted, cheap wine that I've found! Delicious, and I made this for Christmas gifts, one batch with Merlot and one with Chardonnay. Very easy, even for an extremely novice jellymaker like me. :-)

Fluffy Pancakes

This is my new pancake standby. Really yummy with brown sugar instead of white, and a few tablespoons of wheat germ. Next time I might try whole wheat pastry flour. Easy and lovely, especially with a few berries on top. ;-)

Rich and Creamy Tomato Basil Soup

So rich, delicate and delicious! I made it with end of season tomatoes from my garden. Yummy with toasted English muffins! Had to make tomato juice the time-intensive way, since I forgot to buy it at the market: baked tomatoes for 20 min. @ 350, then ran them through my food mill until I had four cups of juice. Delicious, especially since it wasn't too salty, but time-consuming. :-) I didn't peel the tomatoes but will next time, since the bits of peel were distracting from the silky texture. Thanks for a great recipe!

Costa Rican Coffee Panna Cotta with Bittersweet Chocolate-Rum Sauce

This was my first attempt at panna cotta. It was a beautiful presentation, with a great combination of ingredients. It had a bit of a bitter aftertaste though. Maybe I'll leave the coffee out next time. :-) BTW, the chocolate sauce is fabulous for making hot cocoa!

Gorgonzola-Pepper Pasta Salad

This was wonderful for guests. It seemed like a little too much pasta for the amount of veggies, so I might cut that back a bit next time. Lacking champagne vinegar I used balsamic, which was tasty too. It was great the next day for leftovers.

The Best Thai Peanut Sauce

What a wonderful mingle of flavors; more complex than most peanut sauces I've tasted (and I judge Thai restaurants by their peanut sauce). It was a little too thick, so thinned it out with extra coconut milk; maybe next time (and there will definitely be a next time) I'll use a little less peanut butter.

Southern Coleslaw

This was a great, light alternative to my usual creamy coleslaw. After making it according to recipe directions, it was lacking something, so I added extra tomatoes, chopped green onion and about a tablespoon of garlic olive oil. I served it with chicken satay and peanut sauce, and the flavors were terrific together.

Linguine with Asparagus, Bacon, and Arugula

From the perspective of not being an asparagus lover, I have to say..this was great! I doubled the garlic, and sauteed the asparagus a couple of minutes more than called for. Skipped the olive oil entirely and used the bacon drippings for cooking the veggies. Very light, tasty. I served it with citrus-marinated chicken, but probably will skip that in the future and just go for the pasta. Thanks for the yummy combination of flavors!
