So rich, delicate and delicious! I made it with end of season tomatoes from my garden. Yummy with toasted English muffins!
Had to make tomato juice the time-intensive way, since I forgot to buy it at the market: baked tomatoes for 20 min. @ 350, then ran them through my food mill until I had four cups of juice. Delicious, especially since it wasn't too salty, but time-consuming. :-)
I didn't peel the tomatoes but will next time, since the bits of peel were distracting from the silky texture.
