Absolutely the best onion soup I have ever had! I'd give it 10 stars if I could, because what makes it even more wonderful is that I made it in my own kitchen and did not have to pay $6.00+ for a bowl at a restaurant, hee hee.
I ended up simmering it about 15 minutes longer than required (according to taste), but other than that I followed the recipe to a T.
In the future I may make some changes, but that is only in the search for a vegan version to serve to some vegan relatives.
Thank you so much for this recipe, and also thanks for clarifying the need for salt to carmelize the onions- I am normally a no/low-salt cook unless there is a reason for it. Since I used unsalted butter and low-salt broth (you didn't specify), I figured that early dash of salt which was needed would be just fine. And it was- it was perfect!!!
Excellent onion soup, which I added to my collection and will forever make in lieu of my old standyby- Mom's. (sorry Mom!)
