Excellent muffins. Made them gluten free using a combo of brown rice flour, tapioca starch and potato starch in lieu of the flour. Came out perfect - really light. Next time I am going to try to reduce the fat and sugar.

Uncle Buc's Coffee Meat Rub

Fantastic. Interestingly, it doesn't taste so much like coffee but the coffee definitely gives it an earthy quality. Keeper for sure.

Cranberry Pistachio Biscotti

Awesome recipe. Added 1 t. of Boyajian orange oil, reduced the pistachios to about 3/4 C and added a few more cranberries. Made one loaf without the orange oil and definitely prefer it with the orange flavor. Perfect combo for the holidays.

Sloppy Joe Sandwiches

Loved it! Substituted a small can of red sauce in lieu of the ketchup to save on carbs. Tasted even better the second day.

Berry Tiramisu Cake

I used the "Glorious sponge cake" recipe in lieu of this sponge cake but followed the rest of this recipe. The filling is wonderful. I also brushed a little chambord on each tier. A perfect summer treat.
