Cajun Chicken Pasta
My husband and I loved this dish, 12yr old didn't (the peppers). Hubby said it was the best pasta I have made in a long time, and we eat pasta a lot. I used a whole red pepper and 1/2 green, instead of the other way around (well chopped), used 2 green onions, let the chicken sit with spices for 2 hours, used 6 ozs. linguine instead of 4 (there was plenty sauce). I also used 1/2 & 1/2 instead of heavy cream, doubled the basil and used 2 large cloves minced fresh garlic, which I added when I sauted the chicken. Easy, quick and tasty. Served with steamed asparagus and crusty bread. Will make this again, for sure. Thanks Tammy!
