Melanie's Chili
I doubled the recipe, but instead of 2 cans of tomato sauce, I used 1 can tomato sauce and 1 can of petite diced tomatoes. I also used 2 cans of Kidney beans instead of pintos, because that it what I had in the pantry. Delicious!

Ratatouille Bake
Maybe it was the bitter eggplant, but my family did not like this. Good idea, though!

Golden Potato Soup
Delicious! Doubled recipe for left-overs!I didn't have bullion, but used a can of chicken broth and a can of water. I also didn't have onion, but grated half of a carrot into soup. SOOOO tasty! Thanks for an awesome recipe! :)
