Honey Bun Cake I

Reviewed: Oct. 27, 2009
Very tasty cake. I decreased the oil to 1/2 cup and put half the brown sugar/cinnamon mixture in the middle, half on top before swirling. I omitted the glaze and added chopped walnuts on top. It was delicious! I wouldn't say it really reminded me of a honey bun, though. Maybe with the glaze it would...I guess I'll have to try it again to find out!

Marshmallow Fondant

Reviewed: Oct. 25, 2009
This worked out great for me. I used only 3 T. of water and Crisco instead of butter. I made it several days ahead, kept it in the fridge, and despite letting it come to room temp, I did have the most success with microwaving it for a few seconds before rolling it out. Taste was actually good...and I'm not a fondant fan. Will definitely use this recipe again.

Alyson's Broccoli Salad

Reviewed: Aug. 23, 2009
Awesome salad! I used regular white vinegar and 3 T. sugar....about 3 smallish broccoli heads, red grapes (halved) instead of raisins (but I know raisins are delicious also, I just had the grapes on hand), and toasted walnuts instead of sunflower seeds. So yummy!

Eileen's Spicy Gingerbread Men

Reviewed: Aug. 16, 2009
Delicious! I used the whole egg and ended up adding an extra 1/3-1/2 cup flour because the dough was too sticky. Worked out fine. I separated the dough in half to chill and rolled the sections out separately. Rolled them in powdered sugar instead of flour. Baked on parchment paper...8 minutes. Wonderful spicy flavor and smell....stayed soft and fresh for several days. Will definitely make again!

Cornbread Muffins II

Reviewed: Aug. 13, 2009
These tasted just okay. The batter is so liquidy and they didn't rise well...and the final texture was not really like any cornbread I've ever had. More spongy, kind of weird. That being said, my kids loved them and they went well with my beans and ham, but I'll be trying other cornbread recipes.

Delicious and easy. I use it in Cajun Chicken Pasta. Much cheaper than buying it, that's for sure!

Strawberry Pretzel Salad

Reviewed: Jul. 19, 2009
I liked this a lot....but maybe not as much as I hoped I would. The crust layer seemed a bit thick...and turned out pretty crumbly....maybe I should have baked it a little longer than 8 minutes, but I was paranoid about it turning into a rock like some people complained. And whoever suggested that putting the jello mixture in the fridge to set up for an hour before pouring on the cream cheese layer steered me WAY wrong...because my jello was completely set in 15 minutes and I had to scoop it onto the cream cheese. It still looked okay, but not what I was envisioning. All in all, taste is very good....I'll make again.

Chocolate Chip Cookies V

I think these were my favorite chocolate chip cookies EVER. I used vanilla pudding and increased the flour to 2.5 cups, otherwise made according to recipe. Only baked for 8 minutes. Completely fabulous.

White Bean Chicken Chili

Very good. I just cooked frozen chicken breasts in with everything else in the crockpot. Used a can of salsa verde instead of tomatillos. Delicious with some lime corn chips!

EAGLE BRAND® Peanut Butter Fudge

I think this is some great tasting stuff. I used white chocolate chips and chunky peanut butter, omitting the extra chopped nuts. Easy, fast, and very yummy!

Aunt Mary's Chocolate Cake

So so good. I didn't exactly let the chocolate mixture cool to room temperature...didn't have the time for that...and everything still turned out great. Awesome with a buttercream frosting.

Buttercream Frosting

Reviewed: Mar. 17, 2009
Very delicious! I cut the recipe in half and frosted 2 9" round cakes. Just the right amount of frosting. I used cream instead of milk cause I had it on hand. A little extra fat never hurt anything! I also added a dash of salt to balance the sweetness a little. Great basic frosting!

Fried Rice with Cilantro

Reviewed: Feb. 5, 2009
Delicious! I sort of tripled the recipe....this is what I did. I used 1.5 lbs of chicken breasts, diced and cooked with 5 cloves of garlic, 1 jalepeno pepper, and a large handful of finely diced baby carrots. Removed the chicken from pan, increased heat, and added in 7 cups of cooked brown rice (for the health factor...started out with 2 cups raw). Made a well in center and scrambled 2 eggs in it. Poured mixture of sauce (3 T. sugar, 3 T. fish sauce, 3 T. soy sauce, 1 t. sesame oil) and stirred to combine. Added the chicken back, along with a generous sprinkling of dried basil and cilantro (couldn't find fresh). Added in a handful of chopped green onions. Whole family liked it except picky 3 year old who wouldn't even taste it. I'm looking forward to the leftovers tomorrow! Thanks for the great recipe!

Kay's Spaghetti and Lasagna Sauce

Reviewed: Jan. 20, 2009
Yum Yum Yum! I only used one onion, half a large green pepper, and 4 cloves of garlic. Used a 28 oz can of crushed tomatoes and a 14 oz can of Italian diced tomatoes. Ended up using a Tablespoon of Kosher salt and probably a teaspoon of pepper, and 1 teaspoon of oregano. Left the basil as directed. Also added a healthy dash of worcestershire sauce and a finely diced yellow squash. Simmered for a couple of hours, stirring occasionally. Was absolutely delicious!

No Roll Pie Crust I

Reviewed: Dec. 7, 2008
I made this crust exactly as written, except using canola oil instead of peanut. Maybe that would make a huge difference, but I don't know why it would. My crust was tough, oily, and not worth eating. I won't use an oil recipe again. The health benefits are just not worth spoiling your pie over.

Crunch Bar

Reviewed: Dec. 7, 2008
Well, I LOVE this recipe. I did have to make some changes in the proportions though, which is why I didn't rate it 5 stars. It takes at least 1.5 sleeves (6+ oz) of saltines to fill up that pan size. Definitely use foil and spray it liberally with non-stick spray. To get the appropriate coverage, you HAVE to use 1.5 cups butter and 1.5 cups brown sugar. I've tried it with less, and you end up with crackers with very little toffee on them. I used a whole bag of semi-sweet chocolate chips and probably 1/2 cup milk chocolate chips, and also found that a little over a cup of finely chopped nuts was perfect. I can't imagine using more. So yes, I changed the proportions on everything....and the end result is perfection, in my mind.

French Bread

Reviewed: Nov. 25, 2008
This is a really good bread, and very easy. I didn't use a bread machine....just mixed the dough and let it rise for 40 minutes before shaping into loaves. I used 1 cup whole wheat flour with the white. I loved the suggestions about the ice cubes in the oven.....worked great! The bread was gobbled up by my family. Thanks!

Cinnamon Rolls III

Reviewed: Nov. 11, 2008
I had high hopes for these but was disappointed. They were dry and not very flavorful....needed more sugar and cinnamon inside. I did use a different frosting, but the dough just wasn't my favorite. I much prefer the Clone of a Cinnabon recipe. But thanks for the post.
