About this Cook
I grew up cooking. My parents were excellent cooks and my grandparents were even better. As a child, one of my favorite things to do was to create my own recipes. I thought I was a genius when I made a delicious drink made from eggs, milk, cream, cinnamon and nutmeg. I was completely bummed to fin out that my special drink already had a name--eggnog!
My favorite things to cook
CAKE CAKES CAKES. Also cookies, brownies and Christmas treats. I am always experimenting with different ways to prepare chicken and lean beef, as I am trying to eat more healthy foods.
My favorite family cooking traditions
My family still gathers from my grandpa's cabbage rolls or cornbread. My mother's meatloaf is so simple, but the best I have EVER had. Everyone requests it for holidays and carry-ins. Learning to make these family meals has been some of my favorite family memories.
My cooking triumphs
I've made lots of special occasion cakes, but the most challenging (and rewarding) was my best friend's wedding cake. It was classic yellow sponge cake with italian meringue buttercream. Each layer had a different filling: strawberries and cream, orange curd, lemon curd, and vanilla cream. It was decorated in edible pearls and fresh pink calla lillies.
My cooking tragedies
When we wre younger, my cousin, Debbie, and I decided to make a St. Patrick's Day cake as a surprise for our parents. In the middle of beating the VERY green icing, one of us lifted the mixer and green icing flew EVERYWHERE. We were finding specks of green all over the kitchen for weeks!

Snow Ice Cream II
Thank you...I had a wonderful time mixing this with my four year-old. As we mixed it, I told her stories of when my own mother made snow ice-cream for me. I USED Fat free half and half and a bit of skim milk and splenda. I am on the South beach Diet and this really took care of my cravings for ice cream!

Chantal's New York Cheesecake
I have always considered myself a great cheesecake baker. This recipe, however, has blown mine out of the water. It is the best basis recipe there is. You can use this recipe to customize and create all types of wonderful desserts. My favorite, though, is plain. If you have a few extra dollars, invest in madagascar vanilla beans to scrape into the batter.

Chewy Chocolate Chip Oatmeal Cookies
One of my favorites! I fix the flattening problem by popping the bowl of dough in the fridge for 10-15 minutes before rolling them into balls. This firms up that melting butter in the dough so it holds together a little better during the baking process. I NEVER have problems when I do that. In fact, I have to flatten the little balls with a spatula first to keep them from coming out too round. I will continue to make these over and over again!
