I often don't have the ingredients I need and so I "substitute" and it turns out all wrong. But hey, a girls gotta try right? :)

Easy Chicken Curry
I added cooked rice (1 cup dry) to make this a full meal with a veggie dish side. Skip all the oil...just enough to coat pan. Add can of chicken broth. When the chicken was done I added the rice and let it simmer for a couple minutes. I also bought Naan bread from the grocery store, toasted and buttered it and it was great dipped in the curry. I did not have any onions but it was still really good. I keep curry on hand from an authentic Indian market because they sell it by the bag instead of the little containers from grocery store. Easy and quick too!

Four-Berry Smoothies
Tasty and simple recipe. I substituted lemon juice for concentrate. And I had the Costco berry mix that excludes strawberries so I just added 2 cups of that. Splenda instead of sugar. Will add flax seed once I buy some.

Banana Banana Bread
This was my first homeade bread and it turned out great! I only had 3 bananas so I added spices (cinnamon & pumpkin pie) to compensate for lost taste. Next time I will do as other suggested and stir only until moist. And I may have to make it healthier if I want to have this every Sunday morning as I'm planning!
